メニューと蕎麦の打ち手が変わりました。
そば処 壱 のオーナが、蕎麦打ちしています。
細めなので、ツユが絡みやすく、落語の話のように、ツユは少しつけるだけでも、濃いめの出汁なので十分です。
この店のツユは、上田の他の蕎麦屋と違い、出汁にこだわっているようで、濃くて良い出汁なのが特徴。ブレンドだろうけど、多分ソウダガツオを使っているのかな？そこら辺のスーパーでは、なかなか売ってないものなので、鰹節専門の問屋から仕入れてるんだろうな。
作ってみれば判るけど、出汁の原価は馬鹿にならない。この価格でこの味が出るのは、企業努力と言えるのかな。
2021/05 追記
温かい蕎麦と冷たい蕎麦で太さを変えているとのこと。
冷たい蕎麦は、茹で・締め時間短縮と、量感を出すために薄く平たくしているようだ。

The menu and soba noodles have changed.
The owner of Soba-dokoro Ichi is making soba noodles.
Because it is thin, it is easy for the tuyu to get entangled, and as in the story of rakugo, even a little tuyu is enough because it is a thick soup stock.
Unlike other soba restaurants in Ueda, the tuyu at this restaurant seems to be particular about the soup stock, and is characterized by its thick and good soup stock. It's a blend, but maybe I'm using Auxis? It's hard to sell at supermarkets around here, so I guess they buy it from a wholesaler specializing in dried bonito.
As you can see by making it, the cost of soup stock is not stupid. Is it a corporate effort to get this taste at this price?
2021/05 postscript
It is said that the thickness is changed between warm soba and cold soba.
Cold soba seems to be thinly flattened to shorten the boiling and tightening time and to give a sense of volume.

★ ★ ★ ★ ★ 店内は居心地がよいです。天丼などとのセットメニューやミニサイズ、大盛など量の調節もできます。お蕎麦はひとそれぞれ好みが色々と思いますが、私はこれまでに食べたお蕎麦ではNo.2のお味です。
The inside of the store is cozy. You can also adjust the amount such as set menu with tempura bowl, mini size, large serving. I think each person has different tastes for soba, but I have the No. 2 taste of soba I have ever eaten.

★ ★ ★ ★ ★ ざるそばを注文しました。美味しい手打ちの細麺がたっぷりで満足したのはもちろんですが、羊羹の小さいのがついていたり、最後にはサービスの珈琲までついてきたのは驚きました。レジにある楊枝に至るまで、細やかなサービス精神にあふれた良い店でした。また訪れたいです。
I ordered Zaru soba. Of course, I was satisfied with the delicious handmade thin noodles, but I was surprised that the small yokan and finally the service coffee came with it. It was a good store full of delicate service spirit, up to the toothpick at the cash register. I want to visit again.

★ ★ ★ ★ ★ 普通に美味しいです。ただ天麩羅大きくて食べづらいです。インパクトはあります。あとつける蕎麦つゆが少ないかな？あとお客がいるのにパート同士でケンカはやめましょう。
It is usually delicious. However, the tempura is big and hard to eat. There is an impact. Is there little soba soup to add? Let's stop fighting between parts even though there are customers.
