待ち時間はあるかもですが、古民家の落ち着いた雰囲気で、入るとゆったりして食べれます。 つけ汁は甘さ控えめであっさりした感じかな。

たくみや GW中だったこともあってか朝11時に行ったらすでに1時間待ち。 幸い、ずっとそこに並んでなきゃいけないというシステムではないようなので名前を書いて街を散策に。 他の蕎麦屋さんで先に食べたり街をウロウロして12時に戻ってきましたがそこからまだ20分待ちました。 店内に入って納得したのは比較的ゆったりテーブル配置で一度にたくさんのお客さんを裁くようなお店ではないようです。 観光スポットから少し離れたところにあるにもかかわらずこれだけたくさんの待ち客がいるのは美味しくて有名なんだろうと期待しましたが、特にそば通というわけではないボクには他店との違いはよくわかりませんでした。 ただ、麺つゆは先に食べた登城さんよりあっさり薄めで、麺は硬めではあるものの登城さんほど硬くはなかったです。 先に登城さんで皿そばを食べてきたこともあり、たくみやさんでは皿そばとは別にニシン蕎麦を注文してみました。 ニシン蕎麦の方は麺はかなり柔らかめでお出汁はやはりあっさり目でした。 通の方はまた別の感想を持たれると思いますが、ボクには可もなく不可もなくという感じでした。 お店の雰囲気は静かで落ち着いた感じですので、待ちの方がいなければゆっくりゆったりできるかもですが、うしろに何十人もの方が待ってると思うとのんびりはしにくかったです(^_^;) 駐車場は4台ほど停められるスペースがありますが、食べた後はちゃんと観光駐車場に移動しないとほかのお客さんがきっと困ると思います。 2019.05.02

I expected that it would be delicious and famous to have so many customers in spite of being a little away from the tourist spots, but the difference with other stores is often not as much as I do not particularly say soba I did not know. However, the noodle soup was lighter than Mr. Toshiro who ate earlier, and the noodles were harder, but not as hard as Mr. Toshiro. Mr. Toshiro-san had eaten the soba noodles earlier, and Takumiya-san ordered herring soba separately from the dish soba. In the case of herring soba noodles, the noodles were quite soft and the soup was still easy. Though I think that the person of the pass will have another impression again, it was a feeling that it was neither good nor bad for me. 日本旅館のような風情のあるお店で、ゆっくりと寛げます。 接客も本当に気持ちが良い。 お蕎麦ももちろん美味しいですが出石で一番というほどではないかな、個人的な好みですが。 お店の雰囲気含めてとても良いので、人を連れていくと間違いなく喜ばれるお店だと思います✨
You can relax in a restaurant with a taste like a Japanese inn. The customer service is also really comfortable. Of course, soba is delicious, but I think it's the best Izushi, but it's my personal preference. The atmosphere of the shop is very good, so I think it's definitely a shop that will please you if you bring people.

出石名物「出石そば」は通常、手塩皿に盛られたそばが5枚にとろろと生玉子(たまに鶉玉子)がセットになった特色ある蕎麦です。 「いずし観光センター」で『出石皿そば巡り巾着セット』を1800円(税別)を購入すれば、皿そばが3枚ずつにはなりますが3つの店で皿そばを味比べできます。 茶巾の中には寛永通宝ならぬ「寛楽通永」一文銭?が3枚入り、各店にて注文時茶巾ごと手渡しするとスタンプが押されて帰りに返却される仕組みです。 まず1店目は「たくみや」さん、暖簾をくぐると土間に炭が焚かれた囲炉裏があり、奥に座敷があります。私たち3人は囲炉裏を囲むテーブル席に陣取り早速巾着を手渡ししました。 辛汁の入った大徳利に刻み葱と大根おろし、鮫皮おろしと一緒に山葵芋、とろろ芋そして一人1個の生卵の薬味セットが先に届けられました。まずは、猪口に移した辛汁を口元に近づけると昆布と鰹節がほのかに香ります。少量舌の上に転がすといりこか潤めか鰯系の甘みと鯖節の深い旨みが感じられ、最後に重厚な宗田鰹の旨みの余韻が残ります。 蕎麦の露というよりは、ざるうどんのつけ汁に近い力強い辛汁に感じましたが、食べ進めるうちにその理由がよく分かりました。 蕎麦は小麦繋ぎ二割程度の二八か外二、外殻外した丸抜き微粉使用で一寸20本程度の切りべらで厚みが結構あります。長さは25㎝程度、やや切り幅にムラが見られますが艶のあるどっしり重量感のあるそば切りで、やはり外二かな? 1枚目は蕎麦猪口を使用せず手塩皿に直接辛汁をかけて頂きました。二八に香りや風味を多く求めませんが蕎麦特有の歯ごたえ感じられまた喉越しの良いそば切りです。2枚目はとろろ芋と辛汁で、そして最後は残ったとろろ汁に卵の黄身を混ぜて頂きましたがこの最後のとろろ&卵黄が一番美味しく感じられました。 この辛汁だからこそ出せる食感風味、どっしりした微粉ニ八そばにとろろ芋と玉子黄身とのコラボレーション、これこそ出石皿蕎麦の真骨頂か・・・ ニ八そばの特長が最大限に生かされた皿そば、美味しかったです。ご馳走様でした。
