あれもこれも一度に食べたい方は、麻婆豆腐と茹でワンタン、担々麺のランチセットを強くオススメします。 召し上がった後の午後は動けないくらいお腹も心も満たされますよ。
If you want to eat this and that all at once, we highly recommend the mapo tofu, boiled wonton, and dandan noodle lunch set. In the afternoon after eating, your stomach and heart will be so full that you can't move.

老舗巡り第691弾 1958年創業の老舗中華料理屋さん 麻婆豆腐や小籠包などなどを注文。以前料理番組で有名になった陳建民さんのお店。 流石にどれも美味しいが中でも麻婆豆腐と春雨は絶品。 麻婆春雨はこれだけでも食べに来たい逸品! 麻婆豆腐も本場の痺れるおいしさ。

四川飯店と言えばかつての人気TV番組「料理の鉄人」に出演していた陳建一シェフのお父さんが創業し、現在は息子さんが経営する店。赤坂のほか、日本橋、池袋、松山、博多に店舗があります。日本橋四川飯店はコレド室町の2Fにあります。店内は入口から入って奥が右に広がるL字型のフロアになっています。 今回訪問では土日祝日限定のランチセット(シェフズランチ)を注文しました。このランチセットは本日の前菜・スープのほか、牛サーロイン炒め、大海老のピリ辛黒酢炒め、帆立貝のマヨネーズ炒め、マーボー豆腐とご飯、タンタンメン、チャーシュー炒飯の6品のなかから2品をチョイス。杏仁豆腐か愛玉ゼリーのどちらか一品のデザートもいただけて3,500円です。 今回の私の選択は牛サーロイン炒め&マーボー豆腐とご飯。四川飯店と言えば何よりも麻婆豆腐ですから。 その麻婆豆腐はシンプルな白の浅い皿に盛りつけられ、肉の量は多からず少なからず。油(ラー油)の量も一般的。ネギは少なめでわずかに花椒がまぶされています。姿は普通すぎるほど普通。食べるとと豆腐は柔らかく、木綿豆腐なのだろうと思いますが、絹ごし豆腐のような食感。意外すぎるほど辛味が強くはなく、花椒もあとからわずかに痺れが感じられる程度。辛さと痺れが弱めなだけ適度な塩味と旨味が舌にほどよく伝わります。あまりにも普通なので驚きましたが日本に定着した麻婆豆腐の味はここ四川飯店が基準だということなのでしょう。美味しかったです。

The inside of the store is an L-shaped floor that enters from the entrance and the back spreads to the right. At this visit, I ordered a lunch set (Chef's Lunch) limited to weekends and holidays. In addition to today's appetizer and soup, this lunch set has 6 choices: stir-fried beef sirloin, stir-fried spicy black vinegar with scallops, stir-fried scallop mayonnaise, marbo tofu and rice, tantanmen, and fried rice with char siu. You can also have a dessert of either almond tofu or Aitama jelly for 3,500 yen. My choice this time is stir-fried beef sirloin & mapo tofu and rice. Speaking of Sichuan restaurant, it is Mapo tofu above all. The mapo tofu is served on a simple white shallow plate, and the amount of meat is not small. The amount of oil (chili oil) is also common. The green onions are small and slightly sprinkled with Japanese pepper. The appearance is so normal that it is too normal. When you eat it, the tofu is soft and I think it's cotton tofu, but it has a texture like silken tofu. The spiciness is not so strong as to be surprising, and the pepper is slightly numb afterwards. Moderate saltiness and umami are transmitted to the tongue as much as the spiciness and numbness are weakened. I was surprised because it was so ordinary, but it seems that the taste of mapo tofu that has become established in Japan is based here at Sichuan restaurant. It was delicious.

Best Xingren-tofu I ever had in life. Very tofu-like. The mapo-tofu is also very delicious.
