天ざるをいただきました。 蕎麦も美味しかったけど天ぷらのおまけの饅頭の天ぷらと餅の天ぷらが絶品でした。 水蕎麦、食通の方は香りや喉越しを十分楽しめるのでしょうけど私のような大雑把な人間には味のない(いや、あるんでしょうけど)水のみで食べる蕎麦はちょっと…。 見つからないようにそっと蕎麦つゆにくぐらせていただきました。

お店お勧めの天ざるそば(¥1,350)十割そばに小さい水そば、大きめのエビ天とキス天、野菜天とお餅天にサービスのカボチャ天&てんぷら饅頭で大盛りにしなくても十分満足です‼️ 現在はコロナ禍で入店できるのが東北地方の人と新潟県の人だけの制限があります。 忙しいためか声が大きめで威圧感を感じるかも知れませんが、みなさんとても良い方達でしたよ✌️

結論からいうと、入店数秒後注文する前から「帰りたい。(行ってみないと判らない事だが)間違えた、後悔してる。」「もう来ることはない。」です。 急かされるようにおざなりに少し威圧感も兼ね備えて接客され席に案内される。 11時開店直後、店の玄関の戸を開けてから三角巾を装備しながら結びながら接客している。 結ぶ時間もないんですか?なら、あと10秒だけ速く出勤できませんか?これは見せながらやることじゃない。仮にほどけてしまったのなら「ほどけてしまって、失礼しますね」と言い訳しておいた方が良いかと。それか、もう一人接客の方がいるんだからその方に「ちょっとごめん、結ぶからその間だけ接客して!」とお願いした方が良いのでは? 注文取ったらそそくさと厨房に向かい客(と言う名のゴミ)には背中を向けながら「お待ちください。」厨房に言ってんの?客(という名のゴミ)に言ってんの? そば湯を置いて、背中向けて厨房に向かいながら「そば湯で~す」 こういう所、客をどう見てるかが判る。 食事の味とかよりもそういう誠実さのようなところも大事だと思う。 山都の蕎麦と言えばやはり世間に知れ渡る有名です、殿様商売気質は否めない感じでしょうか。 蕎麦は太くて短くてコシがあるような無いような…? 水そばに氷が入ってて冷たかったからか、ザルに乗った蕎麦切りがとてもぬるく感じてしまった。……のかな? あとは人により好みは違うので、私の感想を言ったところで、「それってあなたの感想ですよね?」と、一蹴されるでしょう。 饅頭の天ぷらをサービスということでいただきました。 蕎麦湯の入った湯桶の上に持ってきて、それを乗せたまま置いていく。すげぇ。 この店(蕎麦屋)のそば打ち(工程や技術等)にいちゃもんつけるなら、ご自身でそば打ちした方がこんなところよりも圧倒的においしく、日本一美味しいの蕎麦切りが出来上がるでしょう。 勝手に個人のそば打ちのこだわり等を店側に押し付けるなら、ご自身が蕎麦屋を始めた方が、こんなところよりも断然美味しい超有名な超人気店になること間違いなしですね。 「団体様は、同一そばにてお願いします(※)」みたいな貼り紙がありましたが、どういう意味?同じメニューにしろってこと?何人から団体? (※一言一句合ってる訳ではないです。そのような感じの貼り紙でした。) あとさ、検温してるけど………。常連客に検温してたか? とにかく、トラウマを植え付けられました。 他の方のレビューを見ると、私たちだけが別次元のやまびこに来てしまったのかと思うほど。

開店前に到着して2番目で待つ! 注文は、天ざる特上 天ぷらは大ぶりでボリュームもありとても美味かった! だが 残念なのは肝心の蕎麦 冷水でシメテないからか?シメテもそうなのかわからないがお世辞にも美味しく感じない! 先ず一口サイズの水蕎麦を!と勧められたがこれも冷えてない水で水自体もうまく感じられず! 夏だからじゃなく 冷たい蕎麦を冷水で締めてないぬるい蕎麦なら ワザワザ山都まで来る価値は無いと思う! 繁盛店の手抜きとはこう言うことなのかな? 好きな刺身こんにゃくも 他で以前食べたものに比べるとイマイチ! まあ天ぷらは大ぶりで美味しかったから良しとしておこう。

3月下旬に訪問、寒晒し蕎麦を注文。 おそらく湯捏ねを併用した十割蕎麦で、更科に近い(この地域のそばの特徴)。コシが強く、香りの主張は穏やか。味はとても良かったが、切り方が不揃いで食感が少し残念に思った。 なお寒晒し蕎麦は3月下旬から6月ごろまで食べられます。
