山形ラーメン初めてです、麺は極細ストレート、味は無化調でサッパリ“ラーメン二郎”の対極にあると言っていいでしょう。

無化調、国産小麦麺とのことで、連れと一緒に深く考えずに入店。メニューを見ると、居酒屋みたいなつまみと酒、種類の多いラーメンと、私達にとっては素晴らしいお店でした。
居酒屋メニューに心惹かれつつも、今日のところはラーメンだ!ということになり、炙りチャーシュー醤油ラーメンと炙り鶏黒胡麻坦々麺、生ビールを注文しました。どちらもしつこくない感じでおいしい!
そういえば、無化調をうたってるラーメン店でおいしくなかったことってないです。自信がなければできないのでしょうね。名店と言われる店でも化学調味料どっさりだったりしますから。
山形の食材にこだわった他のメニューも美味しそうで、すごくいい店でした。でも、もう1年前の話です。早く再訪して、今度はお店自慢の鶏料理を食べてみたいです。
Every day I searched for safe and delicious ramen, I found it in the neighborhood of Jimbocho, a fierce battlefield.
Since it is a non-chemical, domestic wheat noodle, I entered the store with my companion without thinking deeply. Looking at the menu, it was a wonderful shop for us, with snacks and sake like an izakaya, and a wide variety of ramen.
I'm fascinated by the izakaya menu, but for now it's ramen! So, I ordered roasted char siu soy sauce ramen, roasted chicken black sesame tantan noodles, and draft beer. Neither is persistent and delicious!
Speaking of which, I've never had a bad taste at a ramen shop that claims to be neutral. You can't do it without confidence. Even the stores that are said to be famous are full of chemical seasonings.
The other menus that were particular about Yamagata ingredients seemed to be delicious, and it was a very good restaurant. But it was a year ago. I would like to come back soon and eat the chicken dishes that the restaurant is proud of.

麺は、北海道産小麦の全粒粉を使った加水率高めの中細縮れ麺で、むちむちした食感のコシ強い冷麺みたい。
冷たいスープによく合う麺で、結構美味しいw
冷っこい醤油スープは、丸鶏ベースに鰹昆布出汁を加えたさっぱりスープに、マルセイ醤油とリンゴ酢を加えた、少し酸味のある美味美味スープ。
マイルドな醤油スープになっていて、これまた美味しいw
美しい照りのある炭火炙り鶏は、軽く塩胡椒してあるので、鶏肉の美味さが強調されていて、これだけで主役を張れるくらいの美味しさ。
むっちりした弾力もある旨い鶏チャーシュー。

★ ★ ★ ★ ★ 神保町に用事があり、偶然前を通りかかって気になったので入ってみました。
山形へ旅行に行ったときに食べた栄屋さんの冷やしラーメンが忘れられず、都内でも食べたいなぁ、と思っていたのでこちらでも冷やしラーメン(特製つったいラーメン)をオーダー。栄屋さんがややコクありの味付けに対し、ととこさんはヘルシー路線。ヘルシーだけど、トッピングのグリルチキンやつくねがとてもジューシーです。食後爽やかな気分になったラーメンは初めてかも。
品揃え豊富な山形のお酒も魅力的でした。日本酒がメインで、ワインも4〜5種類あった気がします。自転車に乗る予定があったので飲めませんでしたが、いつか飲んでみたい酒蔵のボトルが並んでおり、誘惑を振り切るのが大変でした。雅山流 翠月や東光の梅酒も置いて欲しいなぁ〜。今度は公共交通機関で移動する時にゆっくり食事をしに行きたいです。

神保町で遅めのランチ。暑かったので冷たいラーメンで何処か無いか探して発見。
メニューを拝見すると、飼育方法にこだわった鶏を使用したり化学調味料不使用だったりと様々なこだわりがあるようです。炙った鶏肉は歯応え満点。スープはさっぱりした醤油。水菜や食用菊、ゆず皮のちょっとした苦味も凄く美味しい。全粒粉を2〜3日熟成させたという麺は水で締められて冷麺に近いように感じました。薬膳玉子の無料券も頂き温かいラーメンも気になるのでいずれ再訪したいと思います。
