山	山根洋 on Google ★ ★ ★ ★ ★ 横丁の　鉄板こいしや　寒の内(^^♪ 広島駅前のEkiCity、愛友ウォークに平日の11：45。ちょっと早めのランチ向かうは、「お好み焼き　ひらた」新しいビルにつくられた横丁、肉屋と八百屋の近くにあるお好み屋。このEkiCity、もとは戦後の闇市発祥の愛友市場があったところ。再開発前にあった愛友市場にちなんんで天井高を低くし、昔ながらの商店の路地を思わせるような空間が愛友ウォーク。引戸をあけて店内へ。鉄板のついたテーブル席と鉄板前のカウンター席の構成。先客はなく、まよわず鉄板前のカウンター席へ。綺麗に磨き上げられた鉄板がいいね～席に座りながら、肉玉そば770円をオーダー。焼きかたは普通、生地の上にこんもりとキャベツ、若干のモヤシそして豚の三枚肉。その上に生地をかけたら天地返し、しばし蒸らしながら生麺の用意。生麺が茹で上がったら、鉄板で水分を飛ばしながらしばし。さらに天地返しした本体の上に麺をのせて、玉子を割って鉄板にのばす。玉子の上に天地返しで本体と一体化、更に天地返しでできあがり♪ ソースを塗ってネギをかけ、スッと目の前の鉄板に出してくれる地元スタイル♪ ふんわりだけどカラッと、キャベツと豚肉の旨味もでてるね～麺もパリッとしすぎないのがいいね～シャキッとしたネギの食感も食欲増進♪ 4分の１くらいになったところで、卓上の唐辛子で赤化粧。味が引き締まっていいんだよね～いつの間にか完食♪ 広島駅のすぐそこだけど、観光化されてないとこ。また、来ますね♪ Yokocho's Teppanyaki Koishiya (^^ ♪ EkiCity in front of Hiroshima Station, Aiyu Walk on weekdays at 11:45.
