背脂中華(+バラ海苔、味玉)+特製すき焼き豚丼(ランチタイム限定セット)。新潟拉麺で有名な「なおじ」が上井草に2020年12月1日にオープン!近くなので早速訪問。「なおじ」の本店は新潟市だが、東京はこの店で7店舗目となる。場所は10 月末惜しくも閉店となった「らーめん よっちゃん」の跡地。よっちゃんはコロナが収束するころにまた再開し、週末だけ営業しようと考えてるとのこと。なおじ自体久しぶりにいただくので、今回は基本の背脂中華と特製すき焼き豚丼のランチタイム限定セットをいただいた。 ■ 背脂中華(+バラ海苔、味玉) スープはゲンコツや肉で取ったものに片口鰯やウルメの煮干しを合わせた清湯系で大量の背脂が盛られている。不思議とクドくなく比較的あっさりして、煮干しの心地よい風味と上質の背脂が上手く合わさって本当に美味い!麺は平打ち太麺で加水率高め。国産小麦5種類をブレンドしたもので、柔らかめの茹で加減で風味もよく美味い!具材はチャーシュー、穂先メンマ、刻み玉葱、そしてトッピングのバラ海苔と味玉。チャーシューはバラ3枚で、厚さが薄めで柔らかくなるまで煮込んでおり、味付けもよく美味い!穂先メンマも柔らかめで美味い!刻み玉葱はこの手のラーメンに合わない筈がない。いい仕事をしている。有料でバラ海苔を追加したが、風味が良く本当に絶品!味玉は半熟固めだがいい味付けだ。 ■ 特製すき焼き豚丼 ご飯の上にすき焼き風に甘辛く味付けされたチャーシューと玉ねぎ、七味が盛られている。七味のピリ辛感と、甘辛なチャーシューと玉ねぎがご飯によく合って美味い! これぞ新潟発祥の背脂煮干という感じで本当に美味しかったです。全店舗共通した味かどうか分かりませんが、私には満足できる味でした。メニューは背脂中華そばの他に「つゆなし」や二郎系の「なおじろう」がありますが、次回いただきたいです。近くになおじが出来たので、次回は近日中に来たいと思います。あとここの起業者は元セクシー女優の佐倉絆さんで、事務所の先輩である麻美ゆまさんから開店祝いの花がありました。

The place is the site of "Ramen Yo-chan" which was closed at the end of October. Yo-chan is planning to resume business only on weekends when Corona converges. It's been a while since I've had Naoji itself, so this time I had a lunchtime limited set of basic backfat Chinese food and a special sukiyaki pork bowl. ■ Chinese backfat (+ rose seaweed, taste ball) The soup is made from genkotsu and meat, combined with anchovy and dried sardines, and has a large amount of backfat. Mysteriously, it's relatively light and not too savory, and the pleasant flavor of the dried sardines and the high-quality backfat combine well to make it really delicious! The noodles are flat and thick noodles with a high water content. It is a blend of 5 types of domestic wheat, and it is softly boiled and has a good flavor! The ingredients are char siu, tip menma, chopped onion, and toppings of rose seaweed and taste balls. The char siu is made of 3 roses and is simmered until it is thin and soft, and the seasoning is good! The tip menma is also soft and delicious! Chopped onions can't go wrong with this kind of ramen. I'm doing a good job. I added rose seaweed for a fee, but it tastes good and is really excellent! The flavored egg is soft-boiled but well seasoned. ■ Special sukiyaki pork bowl Sukiyaki-style sweet and spicy char siu, onions, and shichimi are served on top of the rice. The spicy taste of Shichimi and the sweet and spicy char siu and onions go well with the rice and are delicious! It was really delicious because it was like sardines that originated in Niigata. I don't know if the taste is common to all stores, but it was a satisfying taste for me. In addition to backfat Chinese soba, the menu includes "tsuyu-nashi" and Jiro-type "Naojiro", but I would like to have them next time. I have an uncle nearby, so I would like to come next time soon. Also, the entrepreneur here was former sexy actress Kizuna Sakura, and Yuma Asami, a senior at the office, gave a flower to celebrate the opening of the store.

背脂がたっぷりと入っているのに以外にあっさりしていて魚介の出汁が効いていて返しの醤油が奥深いスープ、麺は極太なのにもっちりとしてのど越しは最高。玉ねぎのしゃきしゃき感も良いです。チャーシューは薄いが3枚入り、普段は外にもお客さんの列がありますが、天気が悪い日はすぐに入店可能(日曜日でも)

新潟というと長岡のラーメンのイメージが強いですが、魚介+豚骨の冬場に頂くと一層美味しく頂けそうなスープを楽しめました。 スープがライスともよく合うので、そこそこ胃袋のキャパシティに余裕がある方は是非ともライスと共にスープの美味しさを味わってほしいです。
Niigata has a strong image of Nagaoka ramen, but I enjoyed the soup that seems to be even more delicious when served in the winter with seafood and pork bones. The soup goes well with rice, so if you have a reasonable amount of stomach capacity, I definitely want you to enjoy the deliciousness of the soup with rice.

最近?刻み玉葱を入れられるラーメンを多く見かけます。長葱はデフォルトなので言わずものなのですが当然の様に玉葱載せられると楽しみにして居た一鉢が台無しになってしまいます。 注文時に避ける判断を下せる機会を与えて欲しい事この手のスタイル支持されるお店に訴えたいと考えます。 長葱苦手な方は「ネギ抜き」を宣言されるシーン見かけますが同様です。(ラーメンに刻み玉葱載って居る事馴染んで居ないと存じますので)

ココは美味い… ここのテナントは税金対策なのか、ラーメン屋でコロコロ業態を変えるので期待はしておらんかったが実食して感動。 背脂+バラ海苔を頂いたが基本のスープがまずウマい。醤油が違うのか…いつまでも飲んでられる。 麺もこの系には意外な中太ストレートだがコレがまたスープにマッチしている。出汁のパンチのあるのが麺をすすって改めて判る。 自分はラーメンに玉葱は邪魔やと思う人種やけどココは結構、フィットしてる。もう少し細かい方がベスト。湯温も下げんしね。 残念な点を挙げると丼として出した時の、総合塩味。 ノーマルトッピングの姫竹風タケノコは明らかに塩辛過ぎ。美味いけどコレは単体で酒のアテレベルなんでハッキリ言って新潟流塩分の押し付け。 同じ事がバラ海苔にも言える。スープに沈めただけで海塩が溶け出し完飲出来ず。美味いモノ乗せりゃええもんやないやんね。バランスこそがラーメンと言う、料理である事を今一度考えて欲しい。 そして肝心の背脂が少し獣臭い。食べとるウチに気にならん程度のレベルだが背脂多めで味わいたいコクがあるので処理を是非改善して欲しい。 これだけ書いたのはまた行きたいから。たぶん来週も行く。潰れないで頑張って欲しくなる一店。 2022.1/24再訪。 一転してかなり嫌な思いをさせられた。 閉店直前の為か知らんがスープが激ヌル。。。 この段階でもはや帰りたい衝動にかられたが味自体は好きなので文句も言わず何とかススルTV。 しかし驚愕なんはラスト1人自分と言うシチュエーションとは言え、新人バイトに賄いを食わせ始めた事で完全に我慢出来んくなった。 上記の様に頑張って欲しい意味を込めてスープ湯温が低過ぎる旨を伝えると笑い出した。 最悪… 果たしてこの惨状を新潟本店の方はどう思うのだろうか。 週末メンバーはちゃんと頑張っとるんに教える立場の人間が客を小馬鹿にする行為に驚愕した。

背脂中華バラ海苔をオーダー ほどなくしてラーメン出来ました。 ぱっと見でラーメンどんぶり小さいと 思いましたが、ちょうど良いくらいでした。海苔や玉ねぎなどの食感もいい! スープもあっさりな感じで好みです。 ごちそうさまでした。

元々背脂系ラーメンは大好きだけど、仕事で燕三条への出張が多くなり、その度にあちこちの店で食べているうちにどんどんハマっていってます… そして東京でも美味しい燕三条系ラーメンを探していて、ついになおじに! 日曜の昼だけど、並びのてっぺんは8割位入ってそうなのになおじは数名のみ。たまたまかな? 注文は背脂中華バラのりラーメン850円、大盛100円、タマネギ100円の計1,050円。 出てきたのはとても美しく盛られたラーメン! 2ヶ月くらい前に燕三条で食べて以来の燕三条系ということで、見慣れたバラのりやタマネギが盛り沢山なラーメン in Tokyoで嬉しさイッパイ! 麺は太麺でコシもあり美味しい。 新潟でも店によって麺の太さ等は異なるが、個人的には好きな麺。 スープは魚介の出汁に返しの醤油で、出汁が美味しい。背脂たっぷりだけど重くないのはいつも不思議。 出汁はもうほんの少し濃い方が好みかな。 燕三条で気に入っている店のスープがもっと味も濃いからかな。 大量のタマネギはシャキシャキしていて噛むと甘さがあり、最高! タマネギ、海苔、背脂、出汁の最強コンボで、最後まで美味しく完飲! チャーシューは上品な極薄のが3枚くらい入っていたが、とても柔らかく溶けてなくなるくらい。 肉肉しいのが苦手な自分にはちょうどよく、とても美味しかったです。 穂先メンマも大好きなので嬉しい! 出張がいつも燕三条で、新潟市内に行くことがほぼないのでなおじ本店は未訪問…そのため比較はできません。 でも全体のバランスがとても良く、本当に美味しくて大満足! 現地で何度も食べるまでハマらなかった燕三条系だけど、今はもっと多くの人達に受け入れてもらいたいとさえ思います。 この美味しさを知らない人達を沢山送り込みますので、引き続き頑張ってくださいねー。 僕もこれから通います! 再訪したので追記。 今回はタマネギ入りにポイントカードのおまけトッピングでバラ海苔を。 文句なく美味しい組み合わせ。 今回は出汁が少ししょっぱかったけど、そのくらいが好きな自分にはよかった。 けど普通の人にはしょっぱいかと…念のため。 月1くらいで通いたいくらい好きだな…
