さらっと軽く食べたいなと思った時に思い出して訪問。 土曜の昼時で待ちは2名。 外観も内観もとてもミニマルで清潔感に溢れている。 メニューまで限られているので、券売機もスッキリ。 ここの定番と思われる醤油そば750円をチョイス。 背が高めのカウンターの向こうから、背の高そうなご主人が笑顔で迎え入れてくれた。 小さな奥様?と2人でのオペレーション。 見た感じは極めてシンプルで、店のデザインと合ったミニマルなラーメン。 麺が特徴的で、蕎麦のような細麺で薄く茶色がかった色、全粒粉のような粒が見える。 固めでコシはしっかりあり、歯切れも良い。 スープは丁寧に作られたと分かるもので、魚介出汁の旨味たっぷり。 表面に少し脂を浮かせているのがいい。 チャーシューは肉質も調理具合も極上。 ネギは青と白の2種類、とても薄く綺麗にスライスしたもの。 メンマはシンプルだけどしっかりした味付け。 テーブルに調味料も何もないことも含めて、 全体に極めてミニマルで上品にまとまっている。 パンチがあるのが好きな自分には、これまでこういう上品で繊細なラーメンは避けてきたけど、たまに食べるとこれはこれで美味しい。 ただ、繊細すぎて自分には本当の良さまで分かっていないかも。 でも完飲した後、最後に水を飲みかけたけど、口に残る旨味を味わいたかったので飲まず、しっかり余韻まで楽しみました。

レベル高いお店。麺に全粒粉?蕎麦粉?か何かが配合されているのかな、独特な麺だが平打ちにしたらスープにも絡みよく合う。今のスープは品のある美味しいスープだが、個人的には一口目にほんの少し魚臭さが鼻につくのが気になった。奥行きある味わい深さを増すひと工夫あるとスープは最高。しかし、店主が一所懸命作る気持ちは伝わります!また食べに行きたい。

土曜日のランチはこちらを選択。 東京女子大学近くですが吉祥寺からも西荻窪からもやや遠い立地。閉店間際の14時40分ごろの入店にもかかわらず店内はほぼ満席。人気ありますね。 オーダーは醤油ラーメン味玉。あっさりした味わいながら魚系のだしの香りもしっかり。スープのこくは鶏ガラからかな。印象に残るのは麺の美味しさ。製麺所と名乗るだけあり麺にはこだわりを感じました。チャーシューは超柔らかタイプで好みの味。味玉はやや柔らか過ぎでした許容範囲。ぜひ再訪したい。

とんでもなくおいしいラーメン屋でした。 席はカウンターのみ、噂では平日は煮干し等やってるとありましたが、見当たらなかったので、醤油を注文。 スープを一口飲むと、最近のうまい醤油ラーメンの味だなぁという感じ。ただとげがないので、やさしいけど、しっかりと旨みがあり深い。 麺は全粒粉の細麺で若干硬めのプツと歯切れのよい麺。煮干しラーメンのようなパツンパツンの硬めではない。ただ、スープとよく合う。 ネギも2種類入り、味の変化を、たのしめます。卓上に調味料はなく、無化調のラーメンかと思います。調味料なくて十分。 そして、メンマも太くていい! さらにチャーシュー!これがほんとにおいしかった。 普段チャーシューはあまり食べないですが、美味しすぎて、ラーメン食べ終わった後に券売機に行き、チャーシューご飯を単品で追加したくらいです。これはおすすめ!めちゃくちゃおいしい! 時間がたったあと、すこしぬるくなったスープを飲んでみるととっても上品な味になっていて、気がついたら飲み干していました。 ラーメンは全国でかなり食べてきましたが、確実にランキング上位です。なかなかこんなに美味しいラーメンはないかなぁと、思いました。次は塩いこうかな!!

特製醤油ラーメン大盛を頂きました。からだ想いのスープがとても美味しく、チャーシューも厚切りだけど柔らかくて、とても満足しました。卓上に胡椒等の調味料が無く久しぶりに、お店そのままの味を堪能しました。

以前からその和風な佇まいが気になってた「佐々木製麺所」さんを初訪問です。 オープン時間11時を3分過ぎての開店、この時シャッターズは4名、店主さんにお迎えいただき店内右手の券売機にて醤油そばを特製にて。ちょうど1000円。 麺は細麺と平打ち麺から選択可能ですが初訪問なのでスタンダードらしい細麺でお願いです。 店内は綺麗でL字カウンターで8席というキャパ。隣席とのアドバンテージがあって寛げますね。卓上に味変アイテムは無し。箸、レンゲ、紙ナプキン、お冷のグラスとポットがあるだけです。 約7分程で高台より提供となりました。 3種の薬味ネギが印象的な一杯。まずはスープを…節、魚介系に鶏が優しく下支え。お互いが上手く折り合いをつけた和風で上品なスープですね。 醤油はあくまでも円やかで塩分濃度も高くなく脂も控えめ。 出汁の旨味がしっかり出てます。 麺は断面スクエアな細ストレート。自家製の全粒粉入りで加水はやや低めでしょうか。 小麦の密度を感じられるパツっとした歯切れと滑るような喉越し。茹で加減はジャストで麺量は140〜150g程。 チャーシューは炙られた煮豚。箸で持ち上げると崩壊しそうなホロ柔だが、炙りを入れる事で表面はしっかり気味に仕上げられ、口に入れるとホロリと繊維が解ける。 肉好きにはチャーシュー増しの方がモアベターかな。 噛むとトロリと卵黄が溢れる味玉は裏切りなしの旨さ。 シナコリとしたメンマ、しっかり薬味として貢献する3種のネギと隙がない。 突き抜けた感は無いが安心していただける一杯、もちろん完食完飲にてフィニッシュ。 食材の高騰の為に2月から価格改定とメニューの見直しを実施との事。限定も、メニュー見直し後も気になるのでその頃にでも再訪してみたい。
