一休さんより教えられ一子相伝の麹を使った伝統ある納豆 500年余り昔から造られている独特の風味ある納豆。納豆と言うと糸を引くネバネバの様な印象だが、この納豆は見た目は正露丸、味はどちらかというと赤みそと梅干の中間の様な味わい。何度も発酵と乾燥を繰り返すことで濃厚な味わいの納豆が出来上がる。そのまま食べる事は勿論、お味噌汁に入れても美味しい。炒め物の隠し味等も。 伝統ある納豆で他には無いのでお土産に丁度よいかも。 店の左右に無料駐車場有。左は地下駐車場。
Traditional natto using the koji from Ichikosoden taught by Ikkyu Natto with a unique flavor that has been made for over 500 years. 真の精進料理。代々同じ味を守っているのではと思います。万人に媚びない、厳しい禅の精進料理といった印象です。大変美味しく頂きました。お庭も素晴らしく、個室で落ち着けます。 大徳寺納豆は例えると酸味の弱い八丁味噌です。それだけで食べるより、漬物代わりや味のアクセント、お酒の肴に良いかもしれません。

大徳寺納豆という名前はよく聞くものの、実体は今日初めて知りました。干からびた黒豆のような形をしていますので、甘味の少ない甘納豆みたいな物だと思い込んで、試食させてもらいました。食べてびっくり、しょっぱい!甘いと思い込んで食べたから余計にしょっぱかったかもしれません。ただ、後味が引きます、かなり。美味しいご飯のお供に最高だと思ってます。
I often hear the name Daitokuji Natto, but I knew the substance for the first time today. It's shaped like dried black soybeans, so I thought it was like Amanatto with less sweetness, so I tried it. I was surprised to eat it and it was salty! I thought it was sweet and ate it, so it might have been salty. However, the aftertaste is quite good. I think it's the best companion for delicious rice.

This is an amazing Shojin Ryiori restaurant. The chef learned from his father and continues the tradition of his family. Set in a beautiful authentic home with lovely gardens, you are served with incredible hospitality in private rooms. A must try if you are visiting Kyoto. A very special experience.
