直江津と言えば『ニューハルピン』ですが老舗の地元人気店『上海軒』さんに初訪問です。
11:00OPENのちょっと前に到着しましたがすでに開店。
先客4名はすでに食事中でした。
メニューを見てから注文をしたのですが次々に来客、入るなりメニューも見ずに厨房にオーダーしてから着席します。
すごいご当地性を感じました。
そしてあっと言う間に着丼
その後も次々と来客が、そして満席
スープは薄い煮干です。
醤油と酢の味が効いてます。
タンメンも同様で最初から酢が入っています。
好みで付け足すルールの方が嬉しいですがね。
麺は加水率の高い極細ストレートです。
細すぎるのか柔らかすぎて少し残念でした。
飯山にあった幻の『双葉』の麺を思い出しました。
暖簾をくぐってから店を出るまで15分と言う短い時間でしたがその間の来客数（僕らを含め）21名と直江津エリアの人気店を物語ってました。

Speaking of Naoetsu, it's “New Harbin”, but this is my first visit to a well-established local popular store “Shanghaiken”.
Arrived just before 11:00 OPEN, but already opened.
The four guests were already eating.
I placed an order after seeing the menu, but I visited the kitchen one after another without seeing the menu as the guests came in, and I sat down.
I felt a great locality.
And in a blink of an eye
After that, the number of visitors continued
The soup is thin niboshi.
The taste of soy sauce and vinegar is working.
Tammen is similar, and vinegar is included from the beginning.
I'm more happy with the rule that you add it if you like.
The noodles are extra fine straight with high water content.
I was a little disappointed that it was too thin or too soft.
I remembered the fantastic Futaba noodles in Iiyama.
It was a short time of 15 minutes from passing the goodwill to leaving the store, but during that time, 21 people (including us) and the popular store in the Naoetsu area were told.

コクがあり飲みだすと止まらないスープ。
麺はストレートで、上越ではあまりないタイプ。
麺とスープのバランスがとても良い。
何気にチャーハンも美味い。

★ ★ ★ ★ ★ 本日はチャーシュー麺とラーメンの中をいただきました。常連の方も多いようでテーブルにつく前に口頭で注文される方が多いです。
ラーメンはあっさりした醤油スープです。とても美味しいです。
しばらくすると又食べたくなる味です。
チャーシューも味が滲みていて見た目よりとてもやわらかくて美味しいです。

★ ★ ★ ★ ★ ラーメン中700円(大800円、小600円)をいただきました。あっさり煮干系で万人が何時でも美味しくいただけると思います。またモモ肉のチャーシューは、柔らかく味の染み込み方も丁度良い仕上がりです。コスパいいと思います。

海に程近い軒並みの一画に如何にも地元に愛されてそうなお店。実際とても暖かい雰囲気で居心地は最高です。
ラーメンはほんのり煮干し香る、油浮きがほぼ無い極めてあっさりした醤油ラーメン。が、しかし濃厚な醤油豚骨大好きな自分でも全く物足りなく感じない風味と奥行きがあるスープ?永遠と啜ってたいアレですね。
麺はニュルモチ自家製ストレートでスープとの相性も抜群、麺量は中で他所の並と同等。
チャーシューも見た目とは裏腹に味染み最高！
自分の地元ではありませんが上越は昔からお世話になってますし、こうゆうお店は貴重で大事にしたいです。
