【スープ評価】
・濃厚な豚骨スープで､家系の中でもかなりコクがあり､最後まで旨味を堪能できます｡
・やや豚骨臭さが残りますが､それが返って旨味になっていると感じます｡
・薄口で注文したので､塩っぱさは感じませんでした｡これくらいがちょうどいいです｡
【麺評価】
・中太のいわゆる家系の麺です｡今回は硬めでしたので､モチモチとした食感がしばらく続いて､美味しくいただけました｡
【具材評価】
・チャーシューはロースト系の香ばしさがあります｡しかし､美味しさはイマイチです｡改善を求めたいです｡
・のりは4枚､厚く､のりの味も濃く､食べごたえがあります｡
【感想】
・食券をカウンターに置いて、しばらくすると好みを聞かれる仕組みです。
・土曜日の15時でも満席でした｡緊急事態宣言明けの影響もあるでしょうが､家系のいいところは通し営業なところですね｡
・家系の中ではかなりレベルが高いです｡食べログやGoogleマップでも高評価であるのも納得がいきます｡

こちらは王道家出身の人気店ですね。
六角橋にあります。
スープはもちろん大寸胴でしっかり炊いていて
茶濁したスープを丼に注いでいます。
店内には王道家の麺箱が。
麺は平ザルで上げていました。
4分ほどですぐ着丼しました。
スープはどっちも強いバランス型です。
鶏油は適量ですがすごく香りが良かった。
コクもあっていいですね。
粘度はさほどないけど、
豚骨感は強めでダシ感をしっかり感じます。
十分に美味しいスープだけど
この日は本家よりは気持ち控えめに思えました。
その分、醤油感を強めに感じます。
ビシッと効いてるけど尖ってなくて美味しいです。
前に来た時の方がスープは濃く感じたけど
それでも十分に美味しいし、人気のあるのも納得です。
王道家の麺は硬めオーダーでしっかり硬めで提供されました。
中太で長さは短め。
モッチリ感は皆無でゴワゴワした食感でした。
チャーシューはモモのスモーク。
大きさは普通だけど、かなり厚みがありました。
モモで厚切りってどうかな？って思ったけど
食べてみるとビックリするくらい柔らかかったです。
低温調理風でしっとりした食感でした。
スモーク感は控えめでしたが美味しかったです。
ほうれん草は多めで
茹で加減は少し柔らかめ。
本来の味わいがして良かった。
海苔増しは4枚。
ほんとは5枚なのかな？聞かなかったですけど…
大きさも厚さも普通だけど目が粗く見た目はフニャってました。
スープに浸してもそこそこ強さはあるけど
風味はまずまずって感じでした。
この系譜はどこも海苔が残念。

待ち無し 王道家系は初来店
チャーシューメンの食券を購入し着席。
柔め油多めで現金トッピングの野菜をオーダー
マスクを外し席に置いて待っていると席にマスク置かないで下さいと怒られちゃいました。ごめんなさい！ポケットにしまって待ちます。
5分程で着丼。
麺はとても喉越し良くモッチリしていて美味しい。太めの生パスタのような感じ。
スープもチャーシューも美味しかったー♪にんにくたっぷり入れて完食です。
ごちそうさまでした。

The noodles are very smooth and chewy and delicious. It feels like thick fresh pasta.
