麺:中太とまではいかない太さの平打ち極縮れ麺 コシ多少
スープ:塩 豚は感じる 鶏は感じず
具:トロットロにとろけるチャーシュー4枚 小さめでコリッとするメンマ ネギ少々
駐車場:店舗の北と西に計21台 入口も広く、出入りしやすい
店内:1人掛けテーブル×2 2人掛けテーブル×2 4人掛けテーブル×1 座敷4人テーブル×3
注文・会計:入口入りすぐ右に食券機あり
古い店の時は何度となく通っていましたが、新しくなってからは初めて。
初めてのかたはカーナビ必須です。
新店舗になっておしゃれになりました。
スープは透き通って綺麗、麺の不規則な縮れと、とろけそうなチャーシュー、見た目は変わらず美味しそうです・・・
が、スープを一口・・・あれ？こんなに塩強かったっけ？食べ進んでもしょっぱさだけが口に残る。以前は薄味ながらもコクと甘みがある完成度が高いスープだったような？今日は自分の体調が悪いのだろうか？などと思いつつも・・・
チャーシューも柔らかさは絶品なものの、八角のような味付けがちょっと口に残ります。
結局スープ飲み干せませんでした。周りの方々もほぼほぼスープ残してたんで、変わってしまったのは自分の味覚でないのでしょう、きっと。

上記投稿後、ずっと気になってました。もしかしてたまたまだったのかな？と思い、2ヶ月振りに再訪問。
塩加減バッチリ、チャーシューもいつも通り！
やっぱり山喜さん美味かった～
あのときはたまたまだったのでしょう。今日は周りのお客さんもゴクゴクスープ飲み干してました。

I used to go to the old store many times, but it's the first time since it's new.

It became a new store and became fashionable.
The soup is clear and beautiful, the irregular curls of the noodles, the melting char siu, and the appearance remains delicious ...
But a bite of soup ... that? Was it so salty? Even if you continue to eat, only the saltiness remains in your mouth. It seems that it used to be a highly complete soup with a light taste but richness and sweetness? Am I feeling sick today? While thinking that ...
The char siu is also exquisitely soft, but the seasoning like star anise remains in the mouth.
After all, I couldn't drink the soup. Most of the people around me left the soup, so I'm sure it wasn't their taste that changed.
I've been curious since the above post. Did it happen again? I thought, and visited again for the first time in 2 months.
The saltiness is perfect and the char siu is as usual!
After all Yamaki was delicious ~
It probably happened at that time. Today, the customers around me drank the soup.
I will correct it to 5 stars. I will come again ~

今まで食べた中で最高でした。ついお店の方に美味しいらーめんありがとうと心の中で言っちゃいました。
何度でも、毎日でも食べたい❢
もう3ヶ月前なんですけど味忘れられません。一度は食すべきです?

★ ★ ★ ★ ★ 評判どおりでおいしい。特に麺の食感がとてもいいです。１時過ぎに行ったのですがチャーシュー麺が売り切れで通常のしょうゆ熟成を食べましたがチャーシューが４枚入っていて満足でした。本場喜多方ラーメンよりおいしいと感じました。次回は塩ラーメンにチャレンジしてみたいです。
It's as good as the reputation and delicious. Especially the texture of the noodles is very good. I went there after 1 o'clock, but the char siu noodles were sold out and I ate normal soy sauce aging, but I was satisfied with 4 pieces of char siu. I felt it was more delicious than the authentic Kitakata ramen. Next time I would like to try salt ramen.

塩ラーメンをオーダー やっぱ旨い！旨い！旨い！
しっかり旨み感じるクドさ無い透き通るスープ 茹で加減ばっちりの食感最高のウェーブがかった麺 脂身がとても甘いチャーシュー 満足の一杯でした

★ ★ ★ ★ ★ 開店時間が朝９時～昼14時迄のお店、夜は開けてないみたいです。
藻塩ラーメンを食べました。
平打ちのちぢれ麺にとろけるバラチャーシューも美味ですが、スープが本当に美味しい！
味はしっかりとしてるのに、くどさが無くすっきりと飲める…とても洗練された味だと思います。
It seems that the shop is open from 9 am to 14 pm and is not open at night.
I ate algae salt ramen.
The rose char siu that melts in the flat noodles is also delicious, but the soup is really delicious!
The taste is solid, but you can drink it cleanly without any dullness ... I think it's a very sophisticated taste.

今回は前回食べられなかった赤魂を券売機にて購入。
前回は、日本海藻塩ラーメンを頂きましたがそれはそれでGood♪
今回の赤魂も10分掛からない程で着丼。
相変わらず見た目はシンプルなのですが塩の為、スープの向こうに大好きな中太縮れ麺が存在感をアピールしておりました（笑）
まずはスープから。
「これこれ(*´ω｀*)」
そして赤魂に触れないように半分程食べ進め、頃合見計らって一気に赤魂をシャッフル。
「なんじゃこりゃぁ〜〜〜？！」
先程までの優しい塩ラーメンが、狂気の辛味噌ラーメンに大変身？！
まずはスープをひとすすり。
舐めてました。
むせました。
でも先程までの優しい塩も感じつつ、辛味噌の主張も有り不思議な(美味しいですよ！)ラーメンになりました。
赤魂、いい仕事してますねぇ〜(^-^)/
前回に続きたまたま待ち無しで着席出来ましたが、山喜さん間違い無いですね(*´ω｀*)
いずれは本家の喜一さんもお邪魔したいですねー。
今回も最高の一杯ありがとうございました。

2022-1-23 (Sun) Revisited
This time, I bought the red soul that I couldn't eat last time at the ticket vending machine.
Last time, I had Japanese seaweed salt ramen, which is good ♪
The red soul this time also arrived in less than 10 minutes.
It looks simple as usual, but because of the salt, my favorite medium-thick curly noodles appealed to the other side of the soup (laughs).
First from the soup.
"This is this (*'ω` *)"
Then, eat about half of it so as not to touch the red soul, and shuffle the red soul at once at the right time.
"What's this ?!"
Is the gentle salt ramen up to that point transformed into a crazy spicy miso ramen? !!
First, sip the soup.
I was licking it.
I was sick.
However, while feeling the gentle salt that I mentioned earlier, it became a mysterious (delicious!) Ramen with the claim of spicy miso.

I was able to take a seat without waiting, which was the same as last time, but Mr. Yamaki is sure (* ´ω ｀ *)
Eventually, Kiichi, the head family, would like to bother you too.

★ ★ ★ ★ ★ 高畠駅から徒歩3分のところにあるラーメン屋「TAKAHATA山喜」にやってきました。
こちらのお店は喜多方のラーメン店「喜一」出身の方が営業しているお店なんです。
開店が朝9時と朝早くから開いているのでとてもありがたい。
しかも東京から始発の山形新幹線で開店時間にまにあうのが嬉しい。
店頭のウエイティングボードに名前を書き、しばらく待って9時ちょうどに開店。3組目なのでスムーズに入店出来ました。
喜一の系列だとSio（塩）が頼みたくなります。
今回はSio（塩）チャーシューメンを注文。
行列店なので出てくるのも早い。
見た目も美しいのですが、味もとてもうまい！
喜一の関係って、息子の店だろうと、姉妹店だろうと、インスタント麺だろうと基本何でも美味しんですよね。
残念なのは本丸に一度も行ったことないことかな。
本丸は土日祝日休みで行列店、しかも喜多方だから公共交通機関で行っても到着が10時頃になってしまう。社会人にはハードルがものすごく高いです。
そんなか喜一関係のお店で都内からだと山喜が一番早くつくんじゃないですかね。本丸も喜多方だから頑張っても１０時くらいになってしまいますので、そう考えると大変ありがたいお店です。

Kiichi's relationship is basically anything, whether it's a son's shop, a sister shop, or instant noodles.
Unfortunately, I've never been to Honmaru.
Honmaru is a line-up shop on weekends and holidays, and since it is Kitakata, it will arrive around 10 o'clock even if you go by public transportation. The hurdles for working people are extremely high.
I think Yamaki is the fastest to make Kiichi-related shops from Tokyo. Honmaru is also Kitakata, so even if you do your best, it will be around 10 o'clock, so it is a very thankful shop considering that.

塩味が濃いめでしたが、とても美味でした。縮れ麺です。
