線路脇、踏切手前にある建物の2階。階段登り振り返ると、入り口がある。 券売機はボタン大きくメニューわかりやすい。店員女性に食券渡し、指定された席にかける。 よくある、麺カタやマシのコールは無し。ニンニク入りは別メニューでプラス料金。 先にお冷と胡椒、割り箸を頂いた。袋には「守破離」の文字。 破 ポン酢 970円 10分足らずで着丼。 脂の層が厚いので、混ぜながらいただく。ポン酢の効いた優しい味わい。野菜はもやしだけでなくキャベツも多く、甘味をしっかり感じる。 麺は極太麺。最初はワシワシ食べられて、スープを吸ってもコシがある。歯応え良く、食べ応え抜群。 個人的には、麺半分で満足できる量。少なめコールするのを失念していた。が、ポン酢のさっぱりした味わいのおかげか、完食できた。 次は細麺、塩も食べてみたい。

日曜と月曜は細麺の日とのことで、塩ラーメンと半チャーハンを頂きました。この薄濁りのスープはめちゃくちゃ好みでした。うっすら香る生姜の匂いがアクセント。お好みでニンニクを載せてくれるのですが、これがまた合いますね。スープだけでもかなり幸せになれます。 チャーハンは「この量で半チャーハン!?」というような量で驚き。麺の方も普通盛りで結構ボリューミーだったので、後半戦はかなりハードでした笑。 こういういぶし銀のラーメン屋が近所にあると良いよなぁ。

ラーメンも店主も癖が凄いので万人受けするお店ではありません。 おそらく意図的に入りづらい店構えにしていると感じます。 二郎系(細麺の日もありますが)が好きな方が下調べした上で来店するのが良いと思います。

伝説の神保町「さぶちゃん」の味を継承するこちらのお店。フジテレビの元ディレクターがこちらの店主にインタビューをした記事が興味深く、ずっとBMしておりました。念願叶って初の訪問です。 こんな線路の横に店なんかあんのかよと思いながら、GoogleMapで示された古いビルの2階に上がると、確かに明かりがついていまして、店員のお姉さんがいらっしゃいませと迎えてくれました。 漢字1文字が書いてある券売機のメニューは一見分かりにくいですが、ボタンをよく読むと麺の内容がちゃんと解説されています。さぶちゃんライクに『細麺醤油(¥850)』と『半チャン(¥300)』を券売機でポチり。 自分の後から入った二人組のお客さんは、メニューが良く分からないらしく券売機の前でマゴマゴしていると、店主が顔を出し『細麺って外に書いてあるだろ。よく読んでから来てよ』とかなり強い口調で捲し立てておられました。でも料理の写真も無いしメニューに「守・破・離」とか初めて来た人は分かりにくいよね。 厨房では店主がイライラしているのか、什器や丼を投げつけるかのような手荒い音がずっと響いており、料理を待つワクワク感どころか空恐ろしい感じ。もうこの時点で「ダメだなこの店」。 登場した細麺醤油はコシの無い伸びたストレート麺に、生姜の風味だけが際立つコクの感じられないスープ。さぶちゃんって数えきれないくらい食べたけど、こんなに生姜醤油みたいなスープじゃなかったよ。長岡ラーメンじゃないんだから。 チャーハンに至っては味は悪くないものの、お焦げだらけで苦いのなんの。よくこんな出来損ないを平気で客に出すなぁと逆に感心してしまいました( ^ω^ )。きっと客をバカにしているのでしょう。やっぱネットの記事を真に受けるものではありませんね。酷い店だわ。 日曜・月曜以外は二郎インスパイアとなるようですが、そちらは頂いておりませんので評価対象外です。でも線路際の老朽化したビルの暗く殺伐とした殺風景な部屋で、イラついた店主の元、無言ですするラーメンが美味しいわけがありません。店名の“のスた”の意味は「のんびり、のびのび、ストレスをためず、たのしくやる」。お客には真逆の事を強いるみたいですよ。

並びもなかったので 女性店員さんに離 醤油に煮豚をトッピングして頼みました スープは微乳化〜乳化系になっており 麺は太ストレート麺でした 煮豚はホロホロで柔らかいです 煮豚が370円で高いなと思いましたが この野菜の下に物凄い大量に入っており 野菜も麺も量がかなり多いので 大食いの人以外は煮豚は頼むのはやめた方が良いと思います

旧町田二郎行ったことないですが、派生した蓮彌のエビが好きだったんで食べてみました。 M.O 町田オリジナルの略ですね。 大体のラーメンは海老の強さでスープの味が分かんなくなりますが、これは非乳化ベースのスープが殺されることなくスッキリ味わえました!
