老舗ですが、入りやすい雰囲気と落ち着けるお店でした。 シチューとグラタンだけのメニューですが、ぜひセットをおすすめしたい!! 手のひらより小さなグラタンですが、昔ながらのパン粉のサクサクとチーズ。野菜と椎茸、海老が入ってました。海老は3個も!!シチューは初めてなんでミックスにしましたが、お肉ゴロゴロでとろとろで、お野菜も入ってて大満足のボリュームでした。(普通に考えたら多いかも)路地を1本入ったお店ですが、3階まで席があるようで、昼時はすぐに満席のようでした。 あと、火傷に注意ですね!(*^^*)

14時頃訪れました。歌舞伎座でイベントだったようで、それまでは混んでいたようでした。さすがに14時には落ち着いており、待ち時間なしに案内していただきました。頼んだのはビーフシチューのセットです。最初にお通しとして、漬物、きんぴらなどが出てきます。その後料理がグラタン、シチューの順で頃合いを見て出てきます。いわゆるビーフシチューという感じではない、独特な食感です。とても美味しい。どちらもアツアツを食することができるのがいいですね。お値段は張りますが、それだけの体験をできました。シチューはミックス、野菜など3種あるので、また伺いたいです。

老舗ならではの洗練されたビーフシチューはこれからも食べ続けたい。 東銀座にあるシチュー専門店の銀の塔。 昭和30年に開業し、現在に至るまで多くの人に愛されている老舗です。 専門店でもこの時代の流れの速さについていけずお店を閉めることも多いですが、こちらのお店は創業以来同じメニュー同じ味を守り続けているというとても貴重なお店です。 老舗でも時代にあった新業態や新メニューなどの進化をしていますが、銀の塔では味を守りさらなる進化ではなく深化をしているんだなと感じます。 お店の外観は昔の蔵を利用しており昭和初期というよりは明治時代にタイムスリップしたような感じです。 メニューはいたってシンプルで、グラタンかビーフシチューか。 今回は両方いただけるミニセットをチョイス。 まず小鉢やお新香が来まして、その後にグラタンがやってきます。 このグラタンにはマカロニは入っておらず、エビや椎茸が入ったなめらかなホワイトソースいただく料理です。 とろっとしてなめらかなグラタンは、食べていく毎に旨味を感じる逸品で、エビも一度フランベしているのか香りも良いです。 椎茸がいい出汁出してるんですね。 家で出されたらバケットにたっぷり浸して食べてますね。笑 このグラタンが食べ終わる頃に、ビーフシチューがやってきます。 ビーフシチューは土鍋に入ってグツグツした状態で提供されます。 これがめちゃめちゃ熱いので気をつけて。 具は玉ねぎ、にんじん、じゃがいも、お肉も大きにカットされたものがゴロゴロと入ってます。 しかもとても柔らかくて箸でほぐれるほど。 雑味が少なくコクがあってとても美味しいです。 肉にもシチューの旨味が浸透してます。 このシチューと一緒にご飯をいただくのは至福ですね。 一口目でガツンとくる旨さというよりは、食べ続けていくとさらに味の奥深さを感じて、食べ続けてしまいます! オーソドックスなだけにとても洗練されたビーフシチューやグラタンはこれからもずっとつづいていくんだろうとなと感じました。 サービスもとても丁寧で、紙エプロンが必要かと聞いていただいたり、赤ちゃん連れのお客様のベビーカーを外まで出してあげたりと、ちょっとしたおもてなしも変わらずされているので、多くのお客様に選ばれるお店なんでしょうね。 食べ終わって外に出る頃には、また来よう!と思ってる自分がいました。

The thick and smooth gratin is a gem that you can feel the taste every time you eat it, and the shrimp has a nice scent as if it was flambéed once. Shiitake mushrooms have a good soup stock. When it's served at home, it's soaked in a bucket and eaten. Lol By the time you finish eating this gratin, the beef stew will arrive. Beef stew is served in a clay pot in a lumpy state. 『銀之塔』は、創業1955年(昭和30年)の老舗シチュー店です。創業当初から現在まで、シチューとグラタンのみ提供されています。 平日の19時に1人で訪れました。 蔵を改装して造られた店内は、昭和の香りが残るレトロな雰囲気。客席は、1Fが靴を脱いで上がる座敷タイプになっており、当日はこちらに案内されました。 この日は、シチューとグラタンがセットになった『ミニセット(3,970円)』を注文。 シチューは、ミックス・ビーフ・野菜の3種類があり、ビーフにしました。 シチューの前に提供される「グラタン」は、香ばしく“カリカリ”に焼き上げられたチーズの香りと“とろとろ”のホワイトソースに食欲をそそられる一品。具材には、タマネギ、海老、シイタケが使われています。 また、和風出汁が効いた落ち着いた味わいで美味しかったです。 「ビーフシチュー」は、土鍋に並々とシチューが入れられたボリュームのある一品。コクはありますが、しつこくなくすっきりした味に仕上げられています。何杯でもおかわりできるご飯との相性も抜群で、3杯ほどお替りしました。 牛肉は、箸でつかむと“ホロホロ”と崩れ落ちるぐらい柔らかく煮込まれています。 シチュー、グラタンともに寒い冬にぴったりな一品で、満足することができました。店員さんは、ご飯のおかわりをお願いする前に持ってきてくれるなど、丁寧な接客をされていました。 次は、野菜のシチューも食べてみたいです。

Best beef stew I've had in Japan. Beef tongue melts in your mouth. The restaurant building has lots of different rooms with a nice old-time feel. I didn't give 5 stars because it is a bit pricey and the service was quite dry.

Expensive, even the cheapest menu is over 2,000 yen, but well worth it. They specialize in beef stews, and I tried their beef tongue stew which cost over 3,000 yen for regular size and over 4,000 yen for large. They serve their stews on individual casserole bowls, you'll see the stews still bubbling on the table, be careful if you have a weak tongue. I was expecting a very sweet tomato based stew which is the norm here in Japan. Turns out their stew is more on the salty savory side, I think soy sauce based, but it was only mildly salty (which is surprising since in Japan "the saltier the better" is a common approach) and instead you get a very thick, rich beef flavor from meat and bones. And if that wasn't enough, the beef tongue practically dissolved as you touch it, it was impossible to pick them up with a pair of chopsticks (thank goodness for spoons) and just melts in your mouth, one of the best beef tongue I've ever had. A word of warning, you will get a lot of fat build up in your mouth afterwards, so do find desserts nearby to wash them down.
