滋賀県竜王町にある「古株牧場」が営むスイーツ店「湖華舞」。
口溶けがよくコクたっぷりなこちらのプリンは、牧場自慢の搾りたて牛乳がふんだんに使われているほか、ハーブ飼料で育てた地元養鶏所の産みたて卵や、県内で採取された天然ハチミツなど、選りすぐりの素材によってできている。
そして、その素材の良さを引き出すため、プリン液を目の細かい布で丹念に裏ごしするなど、作り手の丁寧な仕事ぶりもしっかりと味となって表れている。
