超辛がうまい! 10余年ぶりに来店、ここで初めて刀削麺食べました たぶん2000年あたりに開業かな? その頃は連日暇があれば秋葉原来ていたので開業すぐに食べに行きました 今あるラーメン屋でも老舗な方です、あの頃は今ほどラーメン屋どころか飲食店あまりなかったので 初めて食べた時は美味しさにシビレタ❗ さあ、今食べたらどんな感じなのか? 辛いの好きなので 激辛麻辣刀削麺850円+パクチー中盛150円 を頼んでみたが… うまし! 他よりやはり味の濃さ、 麺の感触、いずれもよいです! 麺は手仕事で削るので太さ不揃いなんですがそれが醍醐味の一つ ただ辛さが普通に感じる 激辛でふつうの麻辣に思える 今度超激辛(ハバネロ)を食べてみます つまり何回も来たい店! 東京でも一番うまい刀削麺と言っても過言ではないかな パクチーなしでもうまいですが、あえてパクチー載せちゃいましょう! パクチー好きになったのもこの店がきっかけです 最初は嫌いで避けてましたが、何回も食べるうちに逆にクセになりました 跳ねるので紙エプロン必須! 麺は機械切りではなく手切りなのは珍しい方です、機械だと均一なキレイな麺になるんですが、なんかがっかり笑 後日、超辛麻辣刀削麺(麻辣刀削麺+激辛ハバネロ)850円を食しましたが… やっと激辛になった感じ ただ普通に食べたらむせます… 辛いの苦手な方にはすすめません ちなみに私は中国でも麻辣刀削麺食べてますが、違いは中国本場だと花椒ホワジャオだけで辛さしびれがある、あまり(というかほとんど)トウガラシ使ってなかったです、日本で中国本場の刀削麺出してるところはあるのだろうか? やはり日本人向けにアレンジしてるのが一般的な気がします

麻辣刀削麺を大盛、しびれ(花椒)マシでオーダー。 2回目の訪問です。 前回は汁なしをオーダーしたような・・・ 麺が特徴的で美味しいですね。 モチモチはしてないのですが、長さ,厚み、弾力が絶妙です。 しびれはマシたほどは感じず、次回はWにしてみようかな。 感染症対策は合って無いような感じですね。
Order a large serving of mala sword-cut noodles with numbness (sichuan pepper). This is my second visit. Like I ordered no soup last time ... The noodles are characteristic and delicious. It's not chewy, but its length, thickness, and elasticity are exquisite. I don't feel numbness as much as I did, so I'll try W next time. It seems that infectious disease countermeasures are not suitable.

Really authentic... No one spoke English :) You have to choose and pay BEFORE you enter the restaurant. You hand the cook the ticket which you get from the vending machine/ordering machine outside :) The food was great, I ordered the spicy option and it really was quite spicy.

Less spicy than expected, if you like spicy one, you may feel it watery a bit. Vinegar on the table may make it better Of course, staff are kind, so you can enter easily!

A small store with only counter seats, serving knife shaved/cut noodles. Use the vending machine outside and pass the issued ticket to the chef inside. Note: no English menu (at the time of writing) One of my favourite store, I always order the soupless spicy tan tan noodles. Tastes even better with small amounts of black vinegar.
