Amber harass is full of oil. A set meal of conger eel and sashimi Conger has a good bone treatment and is fluffy and very soft.

I can’t stress how spectacular this shop is at grilling fish. I tend to get salmon or Ginmutsu but honestly everything is great. At night I think they only do kaiseki type meals so it is a lot more expensive. Lunch is around 1200¥ depending on the fish you pick. Everyone is super friendly and they have an English menu.
