★ ★ ★ ★ ★ This is one of top leading ramen shop of 2010's. Currently, Japanese ramen taste are varied in several way and it is hard to say what main trend is. Clear soup with Salt taste 塩味 like Tanmen is widely appreciated after long decades of Tonkotsu boom.
This ramen shop serves Salt & Ginger flavoured soup. Ginger taste is fresh and little spicy while you eating. But it is not spicy like a spice cake or ginger snaps.
Ginger is often used as a herb in Chinese and Japanese cuisin. We do not think this soup is strange but familier. However, Ginger and Salt soup for ramen is a new kick to ramen lovers.
There are only 8 seats in basement floor and always a long queue in lunch time. If you go, you'd be better to try non peak hour.
