節系の風味に昆布の旨みと後味に少し甘味を感じる美味しいスープでしたが、小麦の風味を感じる力強い麺(太麺では無い)に対しスープが些か弱いかな!? 100円のつや姫(ライス)は美味しい。

見た目はシンプルですが食材にこだわの感じられるラーメンでした。 塩中華を食べましたがチャーシューもトロトロで美味しかったです。 朝の7時から朝ラーもやっています。

麺は中細縮れ麺。 スープが絡むには最高。 出し汁に、福島鰹の昆布四種類と鰹などの魚介類九種類を合わせた料亭出し汁を使っているそうです。 どうりで上品な味で美味しいはずです。 大きなチャーシューは、とろっとろで口に入れるととろけそうな柔らかさ。 メンマも太いのに柔らかくて噛みきりやすいのに歯ごたえは有り。 どれも上品で美味しかったです。

フルーツ王国と言われる山形県。蕎麦やラーメンといった麺の消費量が日本一なのも有名ですよね。折角なので朝ラーを求めて探したお店がこちら、「陣屋六兵衛」さん。 陣屋六兵衛さんは、元々が料亭を経営していて、事業の一つとしてラーメン屋をしているとの事。お店のポップで知りました。 オーダーは、食券販売機左上の法則に従い「中華そば」を。他にあっさりと塩があるし、写真を見るとオーソドックスな醤油味のようですね。 無料トッピングのチャーシュー油と、味変の柚子の味変を発見。柚子の味変をお願いしてみました。さすがに朝から油は…(笑) 見た目も味も、予想通りオーソドックスな醤油味の中華そばですが、かなり丁寧な仕事をしているのが分かる仕上がり。 特に、スープはかなり手が混んでるように感じます。元が料亭なので拘りが有るんだろうと思ったら、まさにその通り。 途中で、柚子の味変をイン。全く味が変わり、酸味の効いたかなりサッパリ味に変身。たったこれだけで、こんなに味変わるんですね。柑橘系の香りと味が好きな私は、味変の後の方がより好みかな。 店内に貼られてあったお店の拘りを見ると、4種類の昆布と9種類の魚介を合わせた料亭出汁との事。そりゃ、手が混んでるわけだ(^ ^) 麺は、これまた昔ながらの中華そばと言える細ちぢれ麺。スープに良く合い、うまく絡めてくれます。コシは柔らかめ。 スープや麺に限らず、素材にはかなり拘りの有るお店のようで、完全無化調での仕上げ。しかも、かなり地元山形産を使用している模様。それが分かる一杯ですね♫

July 2021 This restaurant offers morning ramen. I enjoyed it 7AM. Soup is made from bonito & kombu broth rich but not heavy. If you like junky or meat broth soup, it would not be suitable. Bold noddles is the best friend of the soup. Also, sliced baked meat is tender.
