特に主人はホタテのヒモの味付け、私はぶりのお寿司に感動しました。
ぶりなのに、トロのような味わい…!!!(T_T)。
大将の食に対する真摯なお考え、おもてなしの心に感動しました。
また伺いますね。本当に美味しかったです‼️
I forgot about the hustle and bustle inside the beautiful store that I visited with my husband, and enjoyed it.
In particular, my husband was impressed with the flavor of scallops and I was impressed with the first sushi.
Although it is the first time, it tastes like Toro… !!! (T_T).

★ ★ ★ ★ ★ 最寄り駅北大路駅から加茂川を渡り東へ、歩いて15分程。
北大路通りを少し北へあがった落ち着いた場所にあります。
お昼は予約のみ。
つまみのついた握りのコースをお願いしました。
ご主人お一人でされていますが手際がよく、次々に美味しい逸品が出てきました。
ぎんなん熱々のほくほく。
甘みのある鯛のお造り。
さわらの西京焼きは脂のりつつあっさりと。
煮蛸は絶妙な柔らかさ。
こっぺ蟹の茶碗蒸しはなめらかで蟹の旨さと合う。
握りに行くまでで既に美食のオンパレード。
美味しい。
握りのシャリは温かめ。でも熱すぎず。ネタに合います。
最後の甘い卵焼きまで感動の連続でした。
1万円いかずにこれらがいただけて大変、楽しいお昼時間。

From the nearest station, Kitaoji Station, walk across the Kamo River to the east for about 15 minutes.
It is in a peaceful place up north on Kitaoji Street.
Reservations are available at noon.
I asked for a grip course with a knob.
Although my husband was alone, he was good at skill, and delicious gems came out one after another.
Gink what a hot.
A sweet potato sashimi.
Sawara's Saikyo-yaki is light and light.
Boiled salmon is exquisitely soft.
The chopped rice bowl is smooth and matches the taste of the bowl.

★ ★ ★ ★ ★ 北大路にある鮨かわのさんに伺ってきました。京都の中心部から少し離れた静かな場所です。
鮨に対する数々の良い意味でのこだわりがありました。
シャリはやや硬めに炊かれ、後から米の旨さが追いかけてきます。そしてシャリの温度はネタによって変えています。どのネタ温度もアベレージかなり高め。素晴らしい。特にマグロは暖かいシャリのおかげでいい口溶けでした。
全体的にしっかり目のお味でお酒が進みます。(塩分過多という感じではなく)
一品のクオリティも高いです。特にサワラの漬けはインパクト大。焼魚も良かった。いくらの下には卵の味の濃い茶碗蒸しが隠れています。
この日のハイライトは喉黒と鰻ですね。脂の多い喉黒はかなりしっかり目の火入れで皮はパリパリ。喉黒ってどこで食べても旨いですが、中でもしっかりした火入れでのアプローチがベストだと思いました。また、鰻も素晴らしい火入れと味付け。いずれもシャリ温度はかなり高めで、これはネタとの相性抜群でした。
一品6品、鮨10貫、玉で終了。ご馳走さまでした。

4.3- 地球滅亡前日に行きたい。 4.1-4.2 感動レベル。ただしここ以上の点のお店はお代も高め(素材も良い)。 3.9-4.0 非常に美味しい。この為だけに足を運ぶ価値のあるお店 3.7-3.8 すごく美味しい。よく再訪する/したいお店 3.5-3.6 美味しい。定期的に再訪する/したいお店 3.4 すごく美味しいわけではないかもしれないが(若しくはチェーン店)、時折再訪するお店 3.0-3.3 好みではない。再訪は基本的に無し -2.9 完食できず、若しくはサービス等に重大な欠点あり (Googleレビューでは、4.0-を星5、3.5-3.9を星4、3.3-3.4を星3、3.0-3.2を星2、-2.9を星1にしています。高額店も含めた相対評価なので、星4の店に何か瑕疵があるわけではありません)
I visited Mr. Kawano Sushi in Kitaoji. It is a quiet place a little away from the center of Kyoto.
There were many good commitments to sushi.
The rice is cooked a little hard, and the taste of rice will follow later. And the temperature of the rice is changed depending on the material. The average temperature of all the ingredients is quite high. Great. Especially the tuna melted in the mouth thanks to the warm rice.
As a whole, the taste of the eyes makes the sake go on. (Not the feeling of being too salty)
The quality of each item is also high. Especially, pickling Spanish mackerel has a big impact. The grilled fish was also good. Underneath the salmon roe is a chawanmushi with a strong egg flavor.
The highlights of the day are black throat and eel. The greasy throat black is fairly well burned and the skin is crispy. It's good to eat black throat anywhere, but I think the best approach is with a solid fire. Also, the eel is wonderfully cooked and seasoned. The sushi rice temperature was quite high in both cases, which was a perfect match with the ingredients.
Finished with 6 items, 10 pieces of sushi, and balls. It was a feast.

4.3- I want to go the day before the destruction of the earth. 4.1-4.2 Impressive level. However, the prices of shops above this point are high (the materials are also good). 3.9-4.0 Very delicious. Shops worth visiting just for this 3.7-3.8 Very delicious. Frequently revisited / desired shops 3.5-3.6 Delicious. Shops I want to revisit regularly 3.4 May not be very tasty (or chain stores), but shops I revisit occasionally 3.0-3.3 I don't like it. There is basically no revisit -2.9 You can not finish the meal or there is a serious defect in the service etc. (In Google review, 4.0- is 5 stars, 3.5-3.9 is 4 stars, 3.3-3.4 is 3, 3.0-3.2 Star 2 and -2.9 are set to star 1. Since it is a relative evaluation including high-priced stores, there is no defect in the store with 4 stars.)

お値段は1人1万円弱くらい?
14貫のコースでした。
シャリは少し暖かく、お酢がしっかり効いています。個人的にはすごく好みでした。
ネタも美味しく、旬の魚を中心に多様なネタを用意してくれています。
大将1人で切り盛りされている様子でしたので、空いている時に訪れた方が良さそうです。
駅から向かう際には川が見えて綺麗です。

The chef spoke very little English but really managed to provide us with an unforgettable experience. Probably the best sushi experience so far in Japan. 10/10!!!!

★ ★ ★ ★ ★ Recommended this sushi restaurant by a local, this place also came up in many reviews I researched for best sushi in Kyoto (I.e. Gion). Local recommended this as on par quality as top sushi /Michelin star restaurants in Kyoto but without the $300pp price tag.
Booked easily through Table Check. Only seats 9 people. Sushi chef didn't speak English but very welcoming and tried to explain the dishes as much as possible.
We probably had close to 18 dishes. The most outstanding omakase I've had in Japan! Tried some dishes I've never even heard of before (sperm sac!? Actually delicious).
Highly recommend if your a foodie and looking for true omakase experience!

This restaurant serves high quality Sashimi and Sushi with a magic touch of the chef Mr. Kawano.
On the course menu, each dish is served one by one. You just have to rely on him and focus on enjoying the perfect balance of freshness and delicate cook of the fish.
Sometimes fish is very lightly roasted or marinated depends on the type. No need to dip it into Soy source as it’s already carefully prepared with adequate amount of soy source, lime, or pinch of salt to extract the best taste of the material.
RESERVATION IS REQUIRED, and NO ENGLISH MENU IS AVAILABLE unfortunately. It’s highly recommended to be accompanied with your Japanese friend or someone who speaks Japanese.
Price is around $100/person for menu except drinks. Credit card accepted (VISA worked).
I took my American friends, they all loved it and enjoyed special moment.
