食いしん坊弁護士のご飯記録 インスタは@joy_sound ーーーーーーーーーーーーー 王子神谷で煮干しチャーージ! 王子神谷にある煮干しラーメン屋さん。 食べログのラーメン百名店にも掲載されています。 平日の13時頃に訪問。 店構えが地味すぎてどこが入り口か分かりませんでした笑 商店街の通り沿いの、写真の横開きのガラス扉を開けます笑 店内は3名ほど。 混んではいませんでした。 注文制です。 肉そば(750円)を注文 シンプルな煮干スープにネギとチャーシュー。 煮干しスープをしっかり味わえる構成です。 スープまで完飲して退店。 美味しかったです! ご馳走様でした。

Order meat soba (750 yen) Simple sardine soup with green onions and char siu. It is a composition that you can taste the dried sardines soup firmly. After drinking the soup, I left the store. It was delicious! It was a treat.

初めてだとお店まで迷いそうな場所で大きな看板も出ていません。 噂には聞いていたのに数年はなかなか行けないでいました。 店先に着いても人によっては扉を開けるにはちょっと勇気が要りますが、入ってしまえば素朴な店内でひたすら同じそばを黙々と食するお客さんがいるのでホッとします。 シンプルな店内のレイアウトにシンプルなメニュー表記。 そばか肉そば、そして大盛のみ。 食券なし。 カウンター席には荷物や上着を置く場所もないので寒い冬の日でもコートは着たまま荷物は肩に掛けたままで食べました。 黙って食べて帰る!それだけですが、煮干しの効いたスープの奥深さ、小麦粉の素朴な薫りが残るこしのある麺さえ食べられたら身も心も満たされること間違いないです。 究極の引算で仕上がった中華そばでした。

ラーメンの原型!? と言うくらいの見た目!! スープはしっかり煮干!! 麺はツルッと噛み応えあり!! 具、 (肉そばで角煮!?長ネギが付いてくる) 量は少ない(スープも)大盛りでもいける 味 美味しかった。 本当に斬新。数あるラーメン屋行ったけど、ここまで極限化されたラーメンは初めて。 トッピング無し、スープは最低限、角煮のみって誤魔化し出来ないし、見たまんまの、素ラーメン。 個人的には、かなり旨かった。

肉そば750円 初訪。2022年3月の日曜、11:12到着。意外に空いていて先客4人、並びなし。目立たないので分かりにくい店。口頭注文後会計。5分ほどで着丼。 スープは煮干しセメント系。やや臭みがあるが、エキスがしっかり抽出されている感じ。動物系、乾物系が支えているよう。量は麺が半分程しか浸かっていない状態。冷め易い。 麺は細めストレート、かなり固めでパツな歯応え。もう少ししなやかな方が好みかな。量は茹で前120gくらいか。 チャーシューは豚バラで厚みがある。適度な歯応えで肉の旨味が感じられる。 途中で胡椒を入れ、5分ほどで完食。煮干し系の伝統店だが、ちょっと好みから外れていたかな。後客3人。

Very simple. The meat, noodles, and broth were pretty good but I don’t understand why it would get recognized by michelin. I recommend getting the meat ramen with extra broth.
