今回 やっと食べる事が出来ました。お昼のランチを頼みました。
出汁が大変美味しかったです。セットの丼ものも、上の具材がボリュームが味もＧＯＯＤです。但し、
１つ 蕎麦が柔らかすぎでした。
これは、たまたま かもしれません。
OPEN days are limited. Even so, the cars in the parking lot were always full on open days.

美味しくて、ほっとするお味のお店です。

店舗の外装、内装は和モダンな雰囲気に造られています。
ただ、お料理まで和モダン風にされており迷走感たっぷりです。
個人的には店舗の内装、外装はモダンにして、もっと言えばモード系を意識しても良いかも知れません。
お料理はしっかりと和を意識して作られるのが良いように思います。
そばつゆはしっかりと出汁を取られています。
なのに、肝心の蕎麦がダメダメです。
のびた素麺のような蕎麦なんてあり得ません。
蕎麦が難しいならうどんだけにして、うどんはしっかりとした手打ちにするとか、取捨選択が必要だと思います。
余裕ができたら蕎麦を追加するとか。
お茶にしても、ティーセット風なポットで提供されていますが、ポットでお出しになるなら、やはり急須で煎茶を提供されるのが良いのではないでしょうか。
まずはお店の味を確立されてから幅を広げられても良いのではないかと思います。
いろいろな点で微妙ですし残念なポイントが目立ちます。
訴求点が曖昧で何を提供されているのかボケちゃっているように感じました。
差別化が図れて素敵なお店を追求しての厳しいコメントでした。

Even for tea, it is served in a tea set-like pot, but if you serve it in a pot, it would be better to serve sencha in a Kyusu.
First of all, I think it's okay to expand the range after establishing the taste of the store.
It is subtle in many ways and unfortunate points stand out.
I felt that the appeal points were ambiguous and I was not sure what was being offered.
It was a strict comment in pursuit of a nice store that could be differentiated.
