退院の夜は深雪(みゆき)御膳、翌日の昼は精進鉄鉢コースをお願いしました。
ここ鳥羽葚は先代のご主人が再興された日本料理店です。先代は残念ながら3年ほど前に鬼籍に入られたようです。
私は先代の味が記憶に残っています。
現在は、娘さんと娘婿のお二人で切り盛りされているようです。
お吸物、煮物等お料理に合わせてお出汁を分けて取ってあり、煮物も素材毎に別々に煮てあり、たき合わせに見せていますが、それぞれのお味は素材それぞれにあった煮方になっています。
仕事が丁寧で、先代の心持ちを継承されているように感じました。
