禅	禅野浩市 on Google ★ ★ ★ ★ ★ ランチ3800円(税・サービス料込)を注文。 ◆間取り…入口で受付をし、階級を上り２階に上がると４人テーブル×4、2人テーブル×1とパントリーがあった。１階には10人くらい入れる個室があり、3階に厨房がある様子。 ◆運営…厨房は不明だが、3階から肉料理を持ってきてくれ、パントリーで最後の仕上げをしてくれたのはベテランの男性１人(緒方シェフ?)だった。その他、料理を担当している若い男性が１人いる様子。接客にはベテランの女性(オーナー？)１人と若い男性1人。BGMは静かなピアノのジャズ。 ◆料理…新じゃがやベーコン・アスパラ・サワークリームが入ったポタージュスープはその場で注ぐ演出が楽しく、かき混ぜると違う味になる工夫がされていた。パンも味に深みがあり、魚は四万十川アオサの入った泡のソースがふわっとしていて、下に敷いてある蒸しキャベツはエビの風味があった。肉料理はリゾットを下にし、その上に鶏肉と陸ひじきを乗せてあり、トッピングの三つ葉の爽やかな和風のエッセンスとともに料理人のチャレンジを感じ、食による幸せを味わえた。 I ordered lunch 3800 yen (tax and service charge included). ◆ Floor plan… When we received the reception at the entrance and went up to the second floor, there was a 4-person table x 4, a 2-person table x 1 and a pantry.
