★ ★ ★ ★ ★ 馴染みの和食店の店長さんに本店をご紹介頂いた。あみ城の店長さんは元「なだ万」にて料理長として腕を振るっていたとのこと。
本日は旬の物を中心に頂いたが特にうまいと思ったのは以下の通り。
ハモの湯引き・・・サッパリとしていながらも後を引く旨みがあり、皮のモッチリとした食感が素晴らしい。梅肉のつけダレが非常に良くあう。
水なす?の刺身・・・非常に瑞々しくパリっとした食感が良い。味は濃いウリかキュウリのような感じでなかなか面白かった。
白海老のてんぷら・・・プリプリで甘味が強くてうまい。いくらでも食べれそうだった。
野菜の煮物・・・どれを食べても旨いが、サトイモ、生麩が特に気に入った。サトイモは今まで食べた中で最高の味付けと食感かも知れない。生麩もワサビが練り込んであるため、よい口直しになる。
ノドグロの炊き込みご飯・・・しっかりと炙った後に釜で炊き込まれたノドグロのうま味と脂がしっかりご飯に移っていた。ご飯に使用している五郎兵衛米も、もともと甘みが強いのかノドグロのうま味+油+米の甘みとねっとりした食感が渾然一体となり、最高の逸品である。
付け合わせの赤だしも味が濃すぎず、出汁のうま味が感じられて素晴らしかった。
食事の味も素晴らしいが、日本酒が一律1000円とリーズナブルなのも嬉しい(私は下戸なのであまり恩恵はないのですが)
また店長さんも会話の引き出しが多く、色々とお話を聞かせて頂けたが、とても低姿勢で嫌みがなく本当に話しやすかった。
料理の味・接客・店の雰囲気・すべてが高い水準であった。この水準で一人1万円前後の単価は非常に安いと思う。
また是非とも来店したいと思う。ご馳走様でした。
The owner of a familiar Japanese restaurant introduced the main store. The manager of Amijo said he was acting as a chef at the former Nadaman.
Today's items are mainly seasonal ones, but the ones I thought were particularly good are as follows.
It has a delicious taste that draws back after it is refreshing, and the texture of the skin is wonderful. The plum sauce is very good.
Is it water? The sashimi is very fresh and has a crispy texture. The taste was like a thick cucumber or cucumber and was quite interesting.
Shrimp tempura... It's supple and delicious with a strong sweetness. I could eat as much as I wanted.
Boiled vegetables...Everything is delicious, but I especially liked the taro and raw fukuro. Taro may be the best seasoning and texture I have ever eaten. Raw bean is also kneaded with wasabi, which makes it a good remedy.
Rice cooked with Nodoro... The umami and fat of Noduro cooked in a pot after being firmly roasted were well transferred to the rice. The Gorobei rice used for rice is also the best gem because the sweetness of Nodoguro + oil + rice's sweetness and moist texture are all in one piece.
The garnish, red garnish, wasn't too strong, and the umami taste of the dashi stock was great.
The taste of the food is great, but I'm happy that the sake is reasonably priced at 1000 yen (although I'm Shimodo, there isn't much benefit).
The store manager also had a lot of conversations with me, and I was able to talk to them in various ways.
The taste of the food, customer service, atmosphere of the shop, and everything were of a high standard. At this level, I think the unit price of around 10,000 yen per person is very low.
I would love to come back again. It was a treat.

★ ★ ★ ★ ★ あみ城が16〜20時の時間帯テイクアウト弁当の販売を再開したと聞き、早速いただきました!
お弁当は、2種類。
「新筍と鯛めし弁当」
「黒毛和牛照焼き弁当」
今回新メニューとして「おかず彩菜膳 2人前 20品」というものもあり、宅飲みにとても良さそうで気になりましたが、そちらはまた次回‥!
お弁当は高級感の漂うパッケージに、お品書きまで付いており、開ける前からテンションが上がりました。お料理は前回よりもさらにグレードアップしており、品数がすごい!
メインは、新筍と鯛の炊き込みご飯。
「幻の米」新脩五郎兵衛米を使用しているそうです。
野菜焚き合わせは、新筍土佐煮をはじめとして10種類。もはやお節料理。
揚げ物は、うにコロッケ、揚げ海老しんじょう、大山鶏照焼きなど
副菜として、合鴨の燻製や蒲鉾、だし巻き卵、全て一つ一つ丁寧に作られています。
コース料理を頂いたぐらいの満足感がありました!
夫の食べていた黒毛和牛のお弁当も大満足だったようで、
いつも少食な息子も、開けた瞬間「すっげー!!!」と叫び、ものすごい勢いで完食しました。
また利用させていただきます!

The bento box has a luxurious package, and even the item description is attached, so the tension has risen even before opening. The food has been upgraded even more than last time, and the number of items is amazing!
The main dish is rice cooked with new bamboo shoots and sea bream.
"Phantom rice" Shinshu Gorobei rice is used.
There are 10 types of vegetable-fired dishes, including new bamboo shoots boiled in Tosa. No longer a osechi dish.
Fried foods include sea urchin croquette, fried shrimp shinjo, and Oyama chicken teriyaki.
As a side dish, smoked duck, kamaboko, and omelet rolls are all carefully made one by one.
I was so satisfied that I had a course meal!
It seems that the Japanese black beef lunch that my husband was eating was also very satisfying.
My son, who always eats little, shouted "Wow !!!!" the moment he opened it, and ate it with tremendous momentum.
I will be using this again!

小鉢のどれも優しく上品な味。
メインの牛肉、玉ねぎの味付けと焼き加減が絶妙。
御飯にほんのりおこげがあったり、味噌汁もホッとする味。
品のある店内で、半個室、ゆっくり食事を楽しめました。
ごちそうさまでした。

過去に3回ほど行ったことがありますがお店の雰囲気やお料理が良くなっていると思います。
ホールの方は皆愛想良く大変居心地の良いお店です。
徳島産の岩がきはぽん酢ともみじおろしであっさりとそしてジューシーにいただきました。
いちじくのフォアグラ味噌焼きは甘さ、酸っぱさ、塩味が絶妙でお互いが引き立てあってました。
万願寺唐辛子焼きは生姜醤油で、〆のカラスミ蕎麦は極細の蕎麦がさらっとお腹にはいって程よい量とお味でした。
日本酒は前日十番祭りで振る舞われた、東京芝の酒「江戸開城の純米吟醸 原酒」をいただきました。初めていただきましたが、最初は酸っぱさが多く感じましたが、酒が進むうち口に馴染んで来て、気が付けばあっという間に1合無くなってしまいました。
以前は熊本料理のイメージが強かったのですが、割烹居酒屋という感じでしょうか、また、再訪問していろんなお料理を楽しみたいです。

I've been there about 3 times in the past, but I think the atmosphere and food of the restaurant have improved.
The halls are all friendly and very cozy.
Iwagaki from Tokushima was lightly and juicy with ponzu and grated maple.
The fig's foie gras miso-grilled has an exquisite sweetness, sourness, and saltiness that complement each other.
Manganji chili-yaki was ginger soy sauce, and the karasumi soba noodles had a moderate amount and taste of extra-fine soba noodles.
As for sake, I had the sake "Junmai Ginjo Harashu from Edo Kaijo", which was served at the Juban Festival the day before. I had it for the first time, but at first I felt a lot of sourness, but as the liquor progressed, it became familiar to my mouth, and when I noticed it disappeared in a blink of an eye.
I used to have a strong image of Kumamoto cuisine, but I think it's like a Japanese-style izakaya, and I would like to visit again and enjoy various dishes.

月~土曜日11:30~L.O.13:30のランチタイムは、一汁五菜の鮮魚炭火焼・和牛と舞茸照焼・豚角煮の3種の昼膳が1,650円。
食べログでランチもお一人様から予約でき、Tポイントも貯まる&使える。
名物「とろとろ豚角煮膳」1,650円
小鉢・炊きたてご飯・味噌汁付。
ご飯・味噌汁おかわり自由。
厳選した三元豚を二昼夜かけて煮込んだ豚角煮は、想定以上のとろける食感とすっきりした味付けで特筆の美味さ。
小鉢は白菜のお浸し・柚子の胡麻豆腐・あおさ餡だしをかけた奥久慈卵のだし巻き卵・野菜の炊合せ・漬物と充実の内容で、流石のクオリティ。
“幻の米”信州五郎兵衛米を土鍋で炊いた炊きたてご飯は、しっかりした甘みともっちり食感が楽しめる。
味噌汁はなめこ入りの白味噌仕立て。

The specialty "Torotoro Pork Kakuni Set" 1,650 yen
Comes with a small bowl, freshly cooked rice, and miso soup.
Free refills of rice and miso soup.
The pork kakuni, which is made by boiling carefully selected Sangen pork over two days and nights, has a more melty texture and a refreshing seasoning than expected.
The small bowl is full of Chinese cabbage soaked, yuzu sesame tofu, Okukuji egg dashi rolls with Aosa bean paste, mixed vegetables, and pickles.

日本酒の種類が豊富なのはポイント高い部分かもしれません。
コロナの自粛明けのこういう時期のせいかも人が足らないのか、注文のため店員さんを呼んでも来てくれるまで結構時間かかったのが残念汗
コースで利用するといいのかもしれません。
