★ ★ ★ ★ ★ 手打ち蕎麦はこしがありなかなかの歯応え。4月末に来店した際には鍋焼きうどん系の冬メニューは終了していましたが、コゴミ等の山菜の天ぷらが絶品。
予約出来無いので、多少待つことは覚悟が必要です。
Handmade soba is chewy and has a good texture. When I came to the store at the end of April, the Nabeyaki udon-based winter menu had ended, but the tempura of wild plants such as kogomi was excellent.
I can't make a reservation, so be prepared to wait for a while.

★ ★ ★ ★ ★ 美味しかったです。ハナビラダケというキノコの天ぷらが珍しかった。ボリューム満点。頑固親父とやさしい奥さんと二人でこじんまりやってます。親父さんは気さくに話しをしてくれるのですが、両耳難聴なので奥さんが受け答えしてくれました。長生きしてください。
It was delicious. A mushroom tempura called Sparassis crispa was rare. Volume perfect score. I'm doing a small job with my stubborn father and my kind wife. My dad talked to me kindly, but my wife answered because I had deafness in both ears. Please live long.

★ ★ ★ ★ ★ 「やぶそば」は水上市街地の分かりにくい場所にありますが、間違いなく蕎麦の名店だと思います。
もちろん蕎麦は絶品ですが、訪問した際にはたまたま天然の舞茸の入荷があってそれを天ぷらにて頂きました。脂はありますがしつこくなくて肉厚な舞茸は今までに食べた事が無い衝撃の美味しさでした。
またランチ時はコーヒーが無料で飲めますし、夜も日本酒の地酒がありますので一杯やる事も可能です。難点は店が狭いので3～4組入ったらすぐに満席になってしまう事です。
"Yabusoba" is located in an unclear place in the water city, but I think it is definitely a famous soba restaurant.
Of course, the soba is excellent, but when I visited, I happened to receive natural Maitake mushrooms and had them at tempura. The thick Maitake mushrooms, which have fat but are not persistent, had a shocking taste that I had never eaten before.
In addition, you can drink coffee for free at lunch, and you can also have a cup of sake at night as there is local sake. The difficulty is that the store is small, so if you enter 3 or 4 groups, it will be full as soon as you enter.
