Mostly tofu based meal, if you are vegetarian, the restaurant will make changes to your meal.
The entire meal is based on the Tea Ceremony, so people are served based on their seating, not their gender. The highest seat is furthest from the door, the second is next to that person. The lowest is closest to the door with their backs toward the door, the person next is second to last.
