名物のもつラーメンは透明なアッサリスープによく合います。新潟米のご飯と一緒に食べるとなお良し。
A place to eat near Shibata Castle.
The specialty ramen goes well with the clear assari soup. It is even better to eat it with Niigata rice.

地元の方のオススメで伺いました。
もつラーメンのチャーハンセット注文、ラーメンに入ってるモツは関東で言うモツとは違い、豚カシラです。
スープはあっさりで飲み干せちゃうぐらい美味しい！
もつラーメンにチャーシューははいってませんが、大量に入っているカシラ肉が肉肉しく美味しいです！
元気のいい店主さんの接客も気持ちよく、美味しい上に気持ちよく帰る事が出来ますw
注意:後日再来店して大盛り無料なので、大盛りにしましたが結構な量です！自信が無い方は普通にされた方が良いかと?

もつラーメンというけど、本当のもつじゃなくてお肉の端材をじっくり弱火で煮込んだしっかり処理されて柔らかいお肉がのったラーメンです
ラーメンも出汁が弱火で時間をかけてとっているのでしょう、香りと旨みたっぷりの透き通ったスープで非常に満足です
個人的には丼物は濃い味が好きなのでもつ丼はラーメンのもつじゃなくて、もう少し甘しょっぱい味付けされたのものが好みですが、非常に満足できました！

It's called offal ramen, but it's not real offal, it's a ramen with tender meat that has been thoroughly processed by slowly boiling the scraps of meat over low heat.
The soup stock of ramen is probably taken over a long period of time, and I am very satisfied with the clear soup with plenty of aroma and umami.
Personally, I like the strong taste of rice bowls, so I prefer the rice bowls that are not ramen but have a slightly sweeter and sour flavor, but I was very satisfied!
It was a treat! !! !!
