オペレーションも都度、オーダー入った分をまるっと茹でてざざっと冷まして盛り分けてたりと、少し大味。決済も現金授受(手洗いの手間が増える)と、難あり。
蕎麦が美味しいので、手間をかけるべきところにかけ、いらない手間を捨てることができて、更にもしかして価格が下がると高回転・高集客な小布施の名所になりうる伸び代の多い店。
