オリンピック連休中に一度位はおいしいものをと、食通の長女が選んだ店が、ふぐの専門店、臼杵山田屋というところ。本来は、大分県臼杵(うすき)のお店ですが、東京にも進出、ここは駅前の丸ビルです。コロナに気を配って、皇居の見下ろせる個室でのランチは久々の贅沢。 さて、真夏にふぐとは、と思いましたが、ここで出された豊後水道でとれた新鮮なふぐは最高でした。ふぐ刺しは肉厚で甘みがあってかみ応えもいい。新鮮なものを捌くので、弾力の強い身は無理に薄くしない方がいいというのです。また、かぼすは臼杵市の公式木であるほど。タレも美味しい。 ふぐは、冬のもの、という概念は誤りである、と臼杵の料理人は言います。元々産卵前の冬の旬と、お盆の頃が夏の旬で、昔からこの頃に食べられていた。それが、大正時代に中国から白菜が日本に入ってきて、鍋料理が盛んになり、ふぐの冬の旬と相まって、ふぐちりが一世を風靡する。夏場は店を閉めるふぐ店まであるそうですが、臼杵ではふぐの郷組合に加盟する山田屋さん級のふぐ専門店が17店もあって、年中営業しています。ちなみに臼杵市は、大分市の南隣の人口36000人の小さな町なのに。 ふぐの懐石、本当に美味しくいただきました。ランチコースは大変お買い得ですね

丸の内店限定の15000円のコースに、白子焼きを追加で注文。 コースの料理は旧正月時期ということで、縁起を担いだ先付け。 てっさはボリュームたっぷりで、お酒と先付けとてっさだけでも満足出来る程。 追加で頼んだ白子の焼き具合が絶妙で表面は香ばしく中はふんわりとろり。臭みもなく頼んで間違いなしの一品でした。 ヒレ酒も香りがよく、量も結構あってちびちびやるのにちょうど良い。 味噌仕立てのふぐ汁は甘めで優しいお味。 かつおの酒盗につけたふぐの石焼きは、自分でさっと焼くんですが、香ばしい香りが食欲をそそります。 ふぐの唐揚げは身がしっかりしていて甘くて美味しい。 すでにお腹は満腹でしたが、ふぐ雑炊をしっかり食べ大満足した後の甘味。 ゆずのジュレは爽やかで満腹のお腹にもするする入り、抹茶でほっとしながらの和菓子。 ほうじ茶飲んで、あー大満足ってなっていたところで〆の煎茶。 お料理は美味しいし、接客も丁寧で居心地が良く、また冬の季節に来たいと思うお店でした。

年に一度は必ずフグを頂きますが、毎年山田屋さんです!西麻布の方も何度か行っておりますが、こちらは外の景色も見れて良いです。ちょうど雪が降っていたので綺麗でした。フグも最高に美味しかったです!

I think it probably has to do with the fact that I am not that found of the taste of fugu... it tastes rather rubber-like when it’s served as sashimi, yet the portion of fugu sashimi is huge for me... it tastes fine when it’s cooked. The restaurant is extremely professional in fugu cuisine, only serves one dish besides fugu (which is steak). So it might be difficult to find a dish for a child who doesn’t eat fugu there.
