A quick note for any non-Japanese people: at this type of traditional sushi restaurant you will not be given a dish of soy sauce. The chef will season the fish with the best amount of soy sauce for you. Asking for soy sauce would be the equivalent of going to a fine dining restaurant and asking for salt. Enjoy the sushi the way your chef presents it. It is amazing.
