★ ★ ★ ★ ★ Sea urchin roe - easily my favorite of the meal. I've never had roe prior to this experience so it was definitely memorable. If this is on your menu, watch how it is prepared - it's like nothing I've ever seen (and sea urchins are a bit disgusting?). Nevertheless, if fatty tuna was buttery, this was more akin to melted butter and just delicious.
Horse mackerel - not a fish I've ever had before but easily the biggest cut of them all. A bit softer than the snapper, taste was closer to tuna though. The presentation was wonderful because of the contrasting colors of the skin, the meat, and the garnish.
