愛知県では数少ない本物の『蕎麦』を味わえるお店。お昼のメニュー950円を頂きました。写真は盛り蕎麦セットで八割蕎麦だそうですが、100円追加で十割(とわり)蕎麦(1日10食限定)もありと判ったが後のまつり。辛み大根じゃなきゃ、などという蕎麦音痴は行かないで欲しい、貴重なおみせです。

店内は静かで雰囲気のよいお店でした。(店奥の店主と奥様の話し声が聞こえるほど…) お蕎麦の香りもよく、また食べたい!と思いました。 おろしがこんなに甘くて爽やかだとは。盛り付けも美しくて写真撮りました。蕎麦湯はいくらでもおかわりしたいと感じるほどにおいしかった。

ミニ天丼ともりそば 1350円 12時半に入って10割は売り切れ 10食位しかないので 入ってから蕎麦が出てくるまで30分以上掛かりました 急いでいる時はやめた方がいいです ここはサラザン系のお店だと思いましたが 今日の蕎麦は蕎麦切りや水切りはいまいちな感じでした 蕎麦汁も醤油辛いというか塩辛い そして蕎麦猪口にしっかりと入っている 手繰り終わっても汁は半分以上残っている これに蕎麦湯足して飲めとお店は言っているように思える 蕎麦汁は徳利で出してくれると自分で調整出来るのでありがたいし 別作りの蕎麦湯にはマドラーがあると嬉しい ミニ天丼の天ぷらは美味しかった

2022.04.07更新 ○十割蕎麦(もり)950円 11:30分入店で注文出来たのが11:35、そして待つこと33分、蕎麦が手元に届けられたのが12:08、2分で蕎麦啜り3分かけてゆっくり蕎麦湯を味わいました。 さて本日の玄蕎麦、産地と品種を訪ねましたが「八ヶ岳」とだけしか伺うこと出来ませんでした。 それでも会津在来種由来の甘味の強さは、その選抜固定開発種「信濃1号」、しかもハイクオリティな長野県八ヶ岳山麓産と確信しました。 信濃1号玄蕎麦を自家製粉して手打ちした蕎麦切りは色濃い目、小さ目の白星黒星が両方見られます。 透明感は無いので丸抜き微分ミックスでは無く、玄蕎麦挽きぐるみを24〜30メッシュ程度で篩った中挽き(粗挽き)粉使用に思われました。 一見延しべら(平打ち)に見える麺ですが、よく見ると切り幅一寸30本程度の極細で、それに比して厚さは倍、2㎜程度の切りべら、麺の断面が縦長の長方形、包丁は揃ってますが延しが今一歩で厚さがバラけた麺線です。 一般的に小麦グルテンの力でツルッと喉越しの良い二八そばに対して、十割蕎麦は、麺の表面にそば粉粒子のザラザラした舌触りを感じる為、二八の様な喉越しと強い弾力は望めません。 しかし当店の粗挽き(中挽き)十割蕎麦は、歯を軽く当てただけで麺がふっつりと切れ、そこからふわっと口中に穀物香広がり強い甘味が後引きます。 辛汁は辛過ぎず甘すぎず美味過ぎず、香り風味豊かな蕎麦切りに合わせた仕上がりですが、この日の十割蕎麦は甘味が強く塩も不要、時々口直しに辛汁をなめる程度、気が付けば蕎麦切りを一度も辛汁に浸すことなく完食してしまいました。 舌と唇に触れる粒子のつぶつぶと、歯を当てたときのモッチリした感触を覚えた次の瞬間には、あっけなく切れる儚さ、侘び寂び。 それでもそこから香りの波紋が口中に広がり、鼻腔の奥深くにまで到達し、何時迄も何処までも甘味後引く十割蕎麦、此処は二八そばには真似のできない壮大な世界、正に蕎麦好きワールドです。 おらがまち小牧市で唯一の蕎麦専門店「稲光」(紗羅餐卒業) 今日は1日主夫、夕飯の買い出し(サント)帰りに十割蕎麦950円を頂きました。 ❇️常陸秋そば特有の上品な甘さが感じられますが常陸秋にしては粘りが強かったので、帰り際伺うと常陸秋そばと八ヶ岳山麓の信濃1号ミックスとのこと、丸抜き微粉と20メッシュ程度の挽きぐるみ粗挽きのミックス。 ❇️延し、切りは今一歩も相変わらず出汁引きは秀逸、関東ほど塩からくはないけれどこの地方では濃いめの辛汁。ご馳走様でした。
