Wasabi pickles are made by soaking pickled wasabi in sake cake.its very very strong wasabi taste. 穂高駅から徒歩5分ぐらい。穂高神社と通りを挟んで斜め向かい(駅からだと左側)。わさび漬けの老舗。セロリ漬けなどもありますが、あくまでもわさび漬けが主役の個人酒店です。原料はわさび、塩、酒粕のみ。 いつ頃食べるか、日を告げるとそれに合わせて食べ頃になるよう、漬け樽の中から選んで詰めてくれます。詰める時に、折に入れ、包装包んで紐をかける手際が見事です。包みの角で舗装紙をピッと折り、紐をシュッとかけ、見ていて惚れ惚れとする手際の良さ。 わさび漬けは繊細で要冷蔵5度以下なので冬以外はクーラーバックと保冷剤持参が必要。(温度が高いとてきめんに風味が落ちます。お店でも保冷バッグを有料で取り扱っています)。 千切りのわさびがぎっしりとたくさん入り、上品な酒粕との味わいがすばらしいです。わさびなのでもちろんかなり辛いですが清涼な辛さです。私はここ以外ではわさび漬けは買いません。自家用なら量り売りもお願い出来ます。 店に隣接した駐車場が数台分あります。

Diagonally across the street from Hotaka Shrine (on the left side from the station). A long-established store pickled in wasabi. There are also celery pickles, but it is a private liquor store where wasabizuke is the main character. The only ingredients are wasabi, salt, and sake lees. When you tell them when to eat, they will choose from the pickled barrels and pack them so that they will be ready to eat. When packing, it is wonderful to put it in a fold, wrap it in a wrap, and tie it with a string. Fold the pavement paper at the corner of the wrapping, squeeze the string, and look at it. Wasabizuke is delicate and requires refrigeration of 5 degrees or less, so you need to bring a cooler bag and an ice pack except in winter. (If the temperature is high, the flavor will be very low. The store also sells ice packs for a fee). It contains a lot of shredded wasabi, and the taste with elegant sake lees is wonderful. It's wasabi, so of course it's quite spicy, but it's refreshing. I don't buy wasabizuke except here. If it is for private use, you can also sell it by weight. There are several parking lots adjacent to the store.

刻んだワサビが沢さん混ぜ込まれたワサビ漬けです。つーント鼻にくる刺激がたまりません。日本酒、白飯が進むワサビ漬けです。 ワサビの茎や葉を醤油漬けも美味しいです。 ワサビ漬けのお店ですが、ゴボウの味噌漬けも売られています。これも白飯が進みます。 味噌漬けの味噌の活用法やワサビ漬けを保存するときは冷凍保存も大丈夫だと教えてもらえました。
