麻婆豆腐は少し期待外れだったが全体的に美味しい。
 Lunch was good with takeaway coffee.
Mapo tofu was a little disappointing, but overall delicious.

★ ★ ★ ★ ★ 以前から気になっていた食材の一つに「アヒルの舌」があり、近くの四川料理店である麻辣大学 晴海トリトン店に「アヒル舌スパイス炒め」なる料理があることを発見したので、日曜日のランチで訪問。
アヒル舌スパイス炒め、四川餃子、四川燃麺と昼飲みとして中華と言ったら瓶ビールを注文。
アヒル舌スパイス炒めは唐辛子と山椒が大量に使ってある干し鍋と言うカテゴリーらしく、四川を感じる本格的で非常に好みな味付け。
ただ、アヒルの舌自体はタンの歯応えはなく、予想を外した柔らかさで、中心に骨もある。
まー多分あまり出ない料理なので、冷凍庫の奥にしまってある様な食材なのかな？とは思いながらもアヒルの舌を食べたことに満足。
四川餃子は餡が結構練り込まれた肉団子状態となっているので、口の中で少しほぐれるジューシーさが欲しい。
また、四川燃麺は和え麺で辛み等は好きだが、もう少しコクと旨味が欲しい気もするが、これが本場の味なのかも？
炒め物系の四川料理は麻辣が効いてて好みだと思えるので、次回はもう少し違うメニューに挑戦したい。
One of the ingredients I've always been interested in is "duck tongue", and I discovered that there is a dish called "duck tongue stir-fried" at the nearby Sichuan restaurant, Asami University Harumi Triton, so on Sunday. Visited for lunch.
Stir-fried duck tongue spice, Sichuan dumplings, Sichuan draft beer and Chinese food for lunch, I ordered a bottle of beer.
Stir-fried duck tongue spice seems to be a category called a dried pot that uses a large amount of chili pepper and Japanese pepper, and it is a full-fledged and very favorite seasoning that feels Sichuan.
However, the duck's tongue itself is not crunchy, it is unexpectedly soft, and there is a bone in the center.
Well, it's probably a dish that doesn't come out very often, so I wonder if it's an ingredient that seems to be stored in the back of the freezer. Though I thought, I was satisfied with eating the tongue of a duck.
Sichuan dumplings are in the state of meatballs with bean paste kneaded in, so I want juiciness that loosens a little in my mouth.
Also, Sichuan Noodles are mixed noodles and I like spiciness, but I feel like I want a little more richness and umami, but maybe this is the authentic taste?
I think that the stir-fried Sichuan cuisine is mala and I like it, so next time I would like to try a slightly different menu.
