味は確かだが、コロナ禍でありながら店主・店員がマスクを着用していない。ミシュランガイド掲載店であるだけに残念。また価格が以前よりも高くなっていると感じる。
The taste is certain, but the owner / clerk does not wear a mask despite the corona sickness. It's a shame because it is a Michelin Guide listed store. I also feel that the price is higher than before.

高級店です、大将は気さくな雰囲気で腰が低く感じが良い。この手の店は食材の旬などを予習して行かなければ有難味が薄れるのでメンドクサイ。が、どっちみち一年に一回行けるかどうかのお店なのでなんとも。
It's a high-class shop, and the general has a friendly atmosphere and feels low and comfortable. If you don't prepare for the season of ingredients at this kind of store, the taste will be diminished, so it's a good idea. However, it's a shop where you can go once a year anyway.

評価させて頂くことも失礼です。 幸せな気持ちで一杯です。 カウンターは10席です。 個室あります!! 1年に1度行けたら幸せです。

神無月の宵呑みに訪れたのは弓之町の「喰切料理 八方」さん、以前”鮨 山もと”さんがあった場所ですね、市街地からも歩ける立地です! 店内はカウンター席と座敷、”鮨 山もと”時代の白木カウンターはそのままですが厨房側壁は改装されており檜氷冷蔵庫が目を引きます! ゲストの状況に応じて食べきれるだけの料理を一品ずつ、できたての状態で配膳する“喰切料理”、完全おまかせになりますが嫌いな食材は事前に聞いて頂けます。魔王ロックを頂きながら一品目「いちじくの白和え」を頂きます。白和えで上質な味わいをアーモンドチップで引き締めています。二品目は焼き茄子、上には雲丹のジュレ、旬の野菜を雲丹も甘みで頂けます! 三品目は鱈の白子、上品な甘みですね、舌の上で溶ける軟らかです。椀物は採れたばかりの県内産松茸が一本入っていますね、シーズン初期で頂けるのは嬉しいです^^ 大きな車海老も入っていました! 造りは3種、鯛・中トロ・赤貝を醤油・ポン酢・大根おろしで頂きます。鯛は身がかなり引き締まって強い食感、中トロは甘みと独特の軟らかい食感を楽しみました。握りはふぐ、白身の繊細な味わいが素敵ですね。2杯目の焼酎は森伊蔵を選択、量はきっちり一合、強い芳香は流石です! 大きな蝦蛄が2尾、しっかり子持ちで食べごたえあるサイズ、奥のワタリガニはこれから旬に入ってきますね。焼き松茸は山陰ののどぐろと一緒に、豪華なコンビを旬の銀杏が脇焼きで盛り上げます。 烏賊の塩辛...ですが塩を使わず醤油だけで味付け、塩っぱくなく烏賊本来の旨味がしっかり、烏賊の醤油漬けが正しい表現ですね。アテの最後はクエの塩焼き、これからが旬ですが既にしっかり脂がのっています、蓼酢でさっぱり頂きました。 食事は9品から選べます(うな丼やイクラ丼もラインナップ!)、その中からおろしそばを選択です。蕎麦はしっかり一人前、大将がその日分だけを手打ちされるそうです。上には辛味大根と茗荷...全部頂いてお腹パンパンです^^ 体格の良い大将 羽村さんは一見強面ですが会話から優しい性格が伝わってきますね、天神町 ひな市さん時代からだと二十数年ぶりの再会、料理界の色々な話をじっくりさせて頂きました!

薄味で工夫が凝らされたお料理が素敵な器で出てきます。お料理を堪能したあと 器を楽しみ二重の楽しみでした。 派手でパッと目を引く器を使っているところが多いなか ひなびてお料理を引き立てる器に大変惹かれました。 お客さんも多すぎず 他のお客さんとのやり取りに耳を傾け心地よい時間でした。 さりげなく声をかけてくださるおかみさんにも感心しました。 また是非訪れたいお店です。

岡山ミシュラン星2つを獲得した喰切料理 八方さんに行って来ました。お任せコースで高級食材をふんだんに使ったお料理は、美味しくてお腹もいっぱい!伊勢エビ マグロ 鮑 スッポン のどぐろ 蟹 フグの白子 青ウナギなど堪能させて頂きました。 お店の方々も皆さん素敵で楽しい岡山の夜を過ごす事ができて良かったです。ご馳走様でした。
I went to Mr. Happo, a food-cutting dish that won two Michelin stars in Okayama. The dishes that use abundant high-class ingredients in the entrusted course are delicious and full! I enjoyed the lobster, tuna, abalone, soft-shelled turtle, crab, puffer fish, milt, and blue eel. I'm glad that all the shop staff were able to spend a wonderful and enjoyable night in Okayama. It was a treat.
