オープンキッチンのカウンターの感じに既視感が、と思ったらフロリエージュさんとオーナーさんが同じということでした。 フロリエージュは大道のフレンチで火入れや食材への熱の入れ方がとにかく上手い印象でしたが、こちらはコンセプトは違い、繊細なお味、旬のものを楽しむと言う感じでした。お野菜や調味料もバランスがよく、一つ一つはどっかりしないのに、満腹感はすごいといった感じでした。 メニューが変わるごとにいきたいお店です。 またペアリングサービスがあり、オーナーさん?店長さん?でしょうか、お食事にあったものを提案してくださるので、その当たりの満足感も素晴らしいですね!
When I thought that the counter in the open kitchen had a déjà vu, Floriege and the owner were the same. Floriege was a French restaurant on the street, and I had the impression that it was good at burning and putting heat into the ingredients, but the concept was different, and I felt that I enjoyed the delicate taste and seasonal foods. The vegetables and seasonings were well-balanced, and although I wasn't disappointed with each one, I felt full. It is a shop that I want to go to every time the menu changes. There is also a pairing service, owner? Store manager? Probably, they will suggest something that suits your meal, so the satisfaction of that is also wonderful!

Went on Friday. Did not live up to the hype nor to the standards that Den and Florilege got us used to. Monotone and heavy sweet-fatty-gamey tastes across all 8 dishes (even with fish!), very limited palette of tastes/flavors and failed drink parings (Tequila and soda?). Underwhelming in the vibrant Tokyo food scene. One would never guess that such well known chefs are behind it. Highlight: the dessert, a rich creme caramel with a sharply bitter/burnt sauce (in a very positive way).

Den Kushi Flori just opened about a year ago and was one of the most anticipated new restaurant openings in Tokyo. The restaurant is a collaboration between chefs Zaiyu Hasegawa of Den and Hiroyasu Kawate of Florilege (each with two Michelin stars and no.11 and 39 on the 2021 World’s 50 Best Restaurants list respectively). The restaurant is affordable and you definitely see influences from both restaurants in each of their dishes. The menu is a fusion of Japanese and Western cuisines and focuses on kushi (skewers). The restaurant has a monthly rotating menu and with Chef Susumu Shimizu joining the team in their second year, the menu is as exciting as ever. For lunch they have a six course menu that is only 6,000 yen although they have a longer eight course menu that is the same as the menu that is offered during dinner. Since this was our first time dining at Den Kushi Flori, we tried the six course menu and we were comfortably full. The service is great just like it is at both Den and Florilege and the restaurant decor is simple yet beautiful. In fact the restaurant looks a lot like Florilege with counter seats surrounding the open kitchen. Looking forward to coming back here again when they have a new menu.

The concept of the DEN KUSHI FLORI is amazingly interesting. It’s truly unbelievable how cooking styles of 2 chefs could create a perfectly balanced combination. You literally get the best of both worlds, Japanese and French. The counter seats give you a great view of the whole kitchen where you can watch how your dishes come to live. I highly recommend this restaurant for people who are looking for something different and exciting.

An interesting, collaborative restaurant produced by MICHELIN star restaurants, Den and Florilege in Tokyo, so the name Den-Kushi-Flori means themselves and their cuisine style, Kushi (skewers). They only have a big counter and you can enjoy their live performances from every seat, that’s a great idea. Menu is a fixed course, also so many alcohol/non alcohol choices including pairing flight. Beautifully cooked, skewer dishes are based on both Japanese (Den) and French innovative (Florilege), especially sardine and liver mousse was so inspiring. Some say their dishes/tastes are too “approachable” and partially agree with them, but overall a great location, live performance, food and service!
