とても作業が丁寧な店主様と助手様、清潔な店内は好感が持てます。 煮干醤油を頂きましたがめちゃくちゃ美味いです。じんわり系の煮干が後引く感じは、タレの風味こそ異なりますが八王子駅近くの有名店、煮干鰮ラーメン圓さんと近いような雰囲気。店を出たあともずっと口の中に風味が残っていました。自家製麺はスープを邪魔しない程度の主張でしたが、麺単体でもイケルくらい美味しい。 めちゃくちゃ並ぶのも納得できます。 良い意味で弘前っぽくないです。都内で流行りそうな感じのスープだと思います。弘前は煮干系のお店が多いですがそれらとは一線を画すスープです。 弘前市内では最上位に位置するラーメン屋さんだと思います!

12:30頃入店し券売機で食券を購入。購入後女性店員に券を手渡し。コロナの影響から車の中で順番を待たされてました。その際に、ナンバーを伝えます。20分程度待たされて、女性店員が車まで迎えに来ました。カウンター席に通され(席はカウンターのみ)、そこから店主のラーメン造りが開始!麺の扱い方、茹で始めるタイミング、ドンブリの温め方、ドンブリの拭き方でさえもこだわりがあり、とても丁寧です。湯切りの仕方は利き腕に持ち替えてしっかりと切っています。麺の盛り付けは、菜箸で麺のカーテンのように一旦持ち上げてゆっくりと綺麗に盛り付けていきます。チャーシューは折りたたんだりしてこだわりの盛り付け。シナチクは、箸の長さほどもあり、個性があります。全てに店主のこだわりと信念とラーメン愛が込められおり、見ていて気持ち良いです。店主のラーメン造りは作業ではなく、趣味・芸術なんでしょうね。店内では動画撮影禁止となっています。静止画を撮る際にも注意を払う必要がありますのでご注意を!

なかなか開店にタイミングが合わずにようやく入れました。営業時間の最後の客になったけど感動する味でした。煮玉子売切れが残念でしたが、最後まで手を抜かず、またお越しくださいという丁寧な接客にも好感が持てました。 消毒も丁寧で安心できます。
