2019.06 カレー南蛮そば 美味しい。スパイスが主張し過ぎていなくバランスが取れている。豚バラも固くなく玉ねぎもいい感じ。そばが茹で過ぎ感あったが、カレーだとこうなってしまうのか??初めての店ではもりじゃないと蕎麦の味は解らないですね…次回は蕎麦前もいってみたい。

20数年ぶりに訪問。 あの頃も新しい店では無かったのに、まだ健在だったのが有難い。 少し大学時代に戻ったようで嬉しかった。

せいろとカツ丼はやめておけ 日曜日の昼過ぎに訪問。 カツ丼1,050円とせいろ600円を頂いた。 評価が高かったので訪問してみたが、せいろとザルがメニューに共存してた時点で、店選びは失敗だった。 結論としては、蕎麦麺を使った調理が好きな店で、蕎麦自体はそんなに美味しくないし、蕎麦湯は旨味がないお湯。 まずカツ丼だが、卵がふわふわで、玉ねぎは歯応えが残りつつも柔らかく、少々汁ダク気味だが米は国内産の硬めかつ、砕けていないプリっとしたものなので、ベチョベチョ丼にはなってない。衣は厚めだが細かすぎず、出汁を吸って良い塩梅だ。 しかし、肝心の豚肉がペラペラ。生姜焼きのようなペラペラ5mm肉に衣8mmを挟み揚げしたような、残念カツが載ったカツ丼であった。肉の厚み以外は理想的なのが残念さを強める印象。 親子丼だったら絶品だったろうと思う。後述する薬味のネギが濃いので、一緒に煮るネギは相当な旨味になるはず。 次回は、親子丼に決まりだ。 そしてせいろ。ニハチ蕎麦とあったが、あんまり蕎麦の香りはない。薬味のネギが強すぎるとか、ワサビが弱すぎるとか、色々要因がある気がする。ツユはかなり濃くて、ショッパ甘い。なので、1/4だけちょっと浸けた蕎麦を啜ったが、蕎麦自体の旨味が弱い。硬めなので喉越しは良いんだけれど。 流石にコンビニの蕎麦?よりは旨いが、お代わりしたいせいろではなかった。先にカツ丼を食べてたからとかも関係ない。旨い蕎麦は口いっぱいに頬張った時、穀物のコクや甘味が広がる。今回はそれが無かった。ひたすらにあっさりしてただけ。 蕎麦を啜った後は、蕎麦湯。だがほぼお湯。容器に沈澱していた茹で汁を攪拌してから飲んでみたが、やっぱりお湯。これでツユを割っても、暖かいだけのツユ割り。蕎麦自体に旨味がないので、蕎麦湯にも旨味が無いのは仕方ない。何杯も飲みたいツユ割りではなかった。 他に湯葉とかツマミとかあったので、多分呑める蕎麦屋の方がメインなんだろう。

First of all, the katsudon, the eggs are fluffy, the onions are soft while remaining chewy, and the rice is a little juicy, but the rice is hard and uncrushed, so it is not a bechobecho bowl. The batter is thick but not too fine, and it is a salted plum that you can suck the soup stock. However, the essential pork is fluent. It was a katsudon with a disappointing cutlet, like a ginger-grilled 5mm meat sandwiched with 8mm of clothing. The impression that it is ideal except for the thickness of the meat is to strengthen the disappointment. I think the oyakodon would have been excellent. The green onions that will be described later are strong, so the green onions that are boiled together should have a considerable umami taste. Next time, it's decided to have Oyakodon. And the bamboo steamer. It was called Nihachi soba, but it doesn't have much soba scent. I feel that there are various factors such as the condiment green onions being too strong and the wasabi being too weak. Tuyu is quite thick and shopper sweet. So, I sipped soba soaked only 1/4, but the taste of the soba itself is weak. It's stiff, so it's good to go through your throat. Soba at a convenience store? It was better than that, but it wasn't the reason I wanted to replace it. It doesn't matter if I ate katsudon first. When the delicious soba is full of mouth, the richness and sweetness of the grain spreads. This time it wasn't. It was just light. After soba, soba hot water. However, it is almost hot water. I tried drinking after stirring the boiled juice that had settled in the container, but after all it was hot water. Even if you break the tuyu with this, it's just warm. Since the soba itself has no umami, it is unavoidable that the soba hot water has no umami. I didn't want to drink many cups of tuyu. There were other yuba and knobs, so maybe the soba restaurant that swallows is the main one.
