土曜日の11:30過ぎに訪問。すでに店内満席で、外にカップルが1組。店主のワンオペで、2人連れが二組出たところで、店主自ら席を片付けして、前のカップルさんと自分らを同時に案内。注文も同時に2組分受け、一気に作るスタイルでした。しかし、出来上がりまで5分ほど。待った感じはさほどしませんでした。 私が雲呑麺、嫁が叉焼麺を注文。麺は細麺、スープは旨味を感じるあっさり目のスープ、メンマも自家製なのか、しっかりしたお味、青ネギもデフォルトで多め入っており、チャーシューは厚めのものがでした。2/3食べ終わったところで、味変で黒胡椒を投下。スープは完飲いたしました。5個盛られたワンタンはふわふわもっちり、麺量は多めで、スープ量は小洒落たラーメンならば2杯分くらいの分量があり、食べ応え十分。あっさり系のスープが好きな方にはドンピシャハマるかもしれません。私は、もう少しスープにパンチが欲しいと思いましたが。ハズレの無い1杯と言えます。

食べログ3.69 土曜日16:00に訪問、土曜日は11:30から通しの営業となるようです。お店は飯田橋駅ほど近くの居酒屋などが入るビルの1階にあります。 訪問時間のせいか、先客は4名のみで並ばず入れました。 店内カウンター席のみ、コロナ対策のため7〜8人ほど座れるくらいでしょうか。 カウンター下には荷物が置けるスペースがあるのでそこに置くようにしましょう。 お店は店主らしき方がワンオペで回しています。職人気質を感じる方でした。 さて、メニューは壁にあるとおり、中華そばメインにワンタンやチャーシューをトッピングするものです。 私はシンプルに中華そば800円を選択、口頭で伝えます。 注文からほどなく着丼しました。あとから入店の客と麺茹で一緒のタイミングとなりましたのでその分少し時間がずれたりすることはあります。 濃厚さっぱりの屋台由来ラーメンでした。 【スープ】 四谷にある人気屋台だった支那そば屋こうや系と言われるようです。塩醤油の動物系スープ。豚骨と鶏ガラの出汁と、濃い沸騰した塩湯に濃口醤油を合わせたカエシです。 一言では濃厚さっぱり系とでも言いましょうか。豚骨の風味が一番強い印象。 麺が隠れるくらいなみなみとしたスープの量は特徴的と思いました。 【麺】 屋台によくある細麺ストレート、加水率はちょうど良くパサパサ感がないコシが強く表面がつるりとした麺です。濃厚なスープと麺のさっぱり感がうまく噛み合っている感じです。 麺の茹で方はテボは使わずにぬめりを残さないよう泳がせた後、平ザルですくっています。 【具材】 刻みネギ、メンマ、海苔。大きめチャーシューは豚バラを巻いた大判。下処理のせいか豚の臭みなく柔らかです。

Chinese Noodle it serves doesn't taste chicken broth though more likely Pork broth. It doesn't look authentic Chinese Noodle though it tastes really good.

Amazing ramen. Tiny menu very traditional standard but exceptionally well crafted ramen. ramen. you can watch the chef make your meal.

Simple still deep but reasonable. This is one of my most favorable style of ramen. Iidabashi is not my town which is far from home and office but I think I’m going to miss this ramen without visiting this place. It’s so Great for me to find this ramen!
