お好み焼き 肉玉そば イカ天をトッピングで頂きました。生地にキャベツ、もやし、豚肉を乗せ、裏返してからは、じっくりと焼き上げます。そばは一度茹でてから、鉄板でカリッとするまで焼いて合わせています。仕上げのお好みソースは大変薄く塗られますが、削り節粉、青海苔、ごま等をトッピングされています。ソースや化学調味料に頼ることなく、素材の甘みや旨みにより、作り手の拘りで、こんなに美味しくなるのかと感動しました。

広島市安芸区船越南にあるお好み焼き屋さん「大樹(ひろき)」に行きました。 場所が分かりにくいのですが、安芸区役所のところを2号線方向に住宅街に入った場所にあります。 通りがかって偶然入るお店ではないですね。 僕が知ったのは、随分と前にお好み焼きを1,000軒以上食べられ本まで出版された横山崇さんが紹介されていたのがきっかけです。 カウンターだけで7~8人入ると一杯になる小さなお店です。 今回は肉玉子そばWのチーズトッピングにしてもらいました。 ちょっと最近チーズがブームになっています。 たっぷりのキャベツをじっくりと蒸らすことによりキャベツの甘みが引き出され美味しくなります。 出汁がしっかりと効いていて口の中でうま味が広がります。 チーズは中に入っています。 磯野製麺のそばを使われていて一体感があって美味しいです。

広島の懐かしいお好み焼きをいただけるお店です。 広島市にある八昌やみっちゃん等の有名店とは全く異なる、地元に愛されるお好み焼き屋さんです。 よって、店内の綺麗さやサービスを求める方、大阪のお好み焼きがベースの方にはオススメ出来ないです。 場所は少し分かりずらいです。細い一方通行道路沿いにあり、手前に駐車場があります。ここ人住んでいますか?と聞きたくなるような近隣の雰囲気です。 店内は7席くらいでしょうか?全て鉄板に面しています。住宅街にあるお好み焼き屋さんって、これくらいの広さと思っていますが、他府県の方はビックリするみたいです。 お持ち帰りも多いようで、ひっきりなしに焼かれていますが、手を抜かず様々な粉を使い、キャベツももやしもたっぷりです。 麺は店内で茹でたものを鉄板に移し炒めます。とても手際がよく無駄がないです。 無愛想とコメントを見ましたが、忙しいのでこんなものかなと思いますし、有名店以外に行けば、同じような対応と思います。 お好み焼きの味は、王道です。ただ味が薄いかもと思いますので、ソースを足すのはありですね。 開店して15分後には満席。持ち帰り注文を焼かれているので、自分のものは中々来ません。それだけ人気と思い、時間に余裕をもって来店する必要がありそうです。 個人的には、再訪したいと思いました。

店名は「ひろき」と読みます。広島市の中心部からナビを頼りに車で約30分。住宅街にポツンとある地元密着型の店です。が、2016年に広島版ミシュランガイドに掲載されて一躍有名店に! 私を含めて観光客も多いです。お好み焼きは食材のバランスが非常に良く素朴な美味しさ。仕上げの黒胡椒がいい仕事してますし、特にそばの焼き具合が絶妙です。

Came to know this store from its high ratings in Tabelog website for Okonomiyaki in Hiroshimaya. While enroute to Saijo, realised the train stops at this station. Its a small shop just 10 minutes walk from the train station and manned by just 1 person; the chef himself. The store is dominated by the grill counter which took up almost half the store, with baseball manga on 1 corner. Hiroshima okonomiyaki is made by layering flour mixture base, cabbage, bean sprouts, meat slices and letting the vegetables cook and collapse over time. Then a choice of udon or soba is stir fried and added to the okonomiyaki with egg on top and coated with a sweet savory sauce. Its my first time having Hiroshima style okonomiyaki. portion is big. generous quantity of ingredients and reasonably priced.
