★ ★ ★ ★ ★ In the middle of over-crowded tonkotsu, shio, & miso ramen, here they are giving another option for everyone : soy based ramen! It tasted very nice & interesting as well. They have english menu, staff can speak English a bit, expect some crowd,lots of local and the noodle is freshly handmade all the time!! Highly recommended :)

★ ★ ★ ★ ★ Elite ramen shop near Hatchobori station (Hibiya, Keiyo lines). 5 min walk from exit A5. If you're lucky, there's no queue otherwise expect to wait at least 20 mins. Vendo style ticketing. English available. Depending on where you end up sitting, you might get close up view of how the noodles are made. Pictured is the recommended kitakata shoyu soy sauce. Soup is light & very tasty but the noodles make it elite! Thick and wavy, aldente! Pork chashu also very good. Try Niboshi style if you prefer dried fish taste.

Not only that noodle is made fresh in store, it is made fresh on order. I'm not sure if we were lucky to be there at the right time or if this is a part of their value
The noodle was quite large, which usually wasn't my preference, but they kneaded them up again before cooking so it develops irregular shapes which, I guess, help soup stick to it much better. See the photo. The texture is firm and springy which I love
We ordered some bowls with soy-based and some "nibosi" soup. The latter seems to be soy-based soup with their blend of spices mixed in. Both were very tasty.
If you are in nihonbashi, this place is most definitely worth a detour

★ ★ ★ ★ ★ You really are spoiled for choice when it comes to choosing a bowl because they have so many variations on their bowls. The wait was around 30-40 minutes to get seated at the counter, but it was worth the wait. The noodles are cut right in front of you then boiled. Delicious flavor, very tasty. Try it if you're in the area.

★ ★ ★ ★ ★ Tokyo’s top class Niboshi (dried anchovies) soup Ramen place. Also known as fresh house-made noodle - they start making noodle after you order. If you are lucky you may be able to sit the best counter seat where you can watch the whole process from kneading dough, flattening, cutting and boiling in front of you.
Soup is thick in dashi and very flavorful. Just like pasta fresca, their noodle is softer than regular Ramen with little curl which entangles the soup well.
To avoid 20-30 min wait, go early or go late.

It's a popular restaurant that must be lined up, but it's hard for me, who is accustomed to Hokkaido's small noodles, to line up.
