すし匠本店の大将がハワイに行った頃から築地(日本各地)だけではなく秋田の魚介の出番が増えました。こんなに洗練された秋田産の魚介を食べられる寿司店は日本中探してもここだけ。

私のコメントは前店舗のコメントです。あしからず。 入って左にカウンターがあり、右奥の座敷で会食させて頂きました。 秋田では一番の寿司店とおもいます(天駒も一番と書いていますが)。隠れ家的な立地、建物ですね。料金=接客・味。 小ぶりな寿司が上品に感じられます。

I think it's the best sushi restaurant in Akita (although I wrote that Tenkoma is also the best). It's a hideaway location, a building. Price = customer service / taste. ネタや味もさることながら、清潔な店内、きびきびと無駄のない動きのご主人や職人さんも素晴らしい。 コースはまず握りがひとつ出て、おつまみが数点続き、その後は握りとおつまみがランダムに出てくる。 地物も出るが、今回は北海道から九州まで色々な産地の魚介をそれぞれ素晴らしい仕事で食べさせてくれた。 握りには2種類のシャリを使っていて、ネタに合わせて変える気の配り様。 新鮮なネタあり、熟成されたネタもあり。 秋田に来たら再訪間違いなしのお店です。

一貫一皿一料理にそのこだわりが感じられ、その食材がどのようにして食するのが最高においしいか追求されている感じがしました。 またその食材に合うお酒や提供のタイミング等も完璧でした。 ここまでくると料理の芸術と呼ばざるをえません。 2人でビールと純米大吟醸を飲んでちょうど50,000円。 酒代が高めの設定だな。個人的には食事の店で酒代を高く取る店は信用しない。料理屋はその料理で客から料金を取るべきであって、酒代で儲けるのは飲み屋のする事。 またコース料理の中でさわらの子供と紹介された握り寿司があったが、完全に生臭くて少し痛んでいた。口に入れた瞬間古い魚の生臭くささが広がり、吐き出しそうになったが、あえて飲み込んだ。当然、翌日は下痢に。 それ以外は本当に最高完璧だったのに残念でなりません。 なので、星の数は少なめです。

完全にやってしまいました…結論20,000円出す価値は感じられませんでした。味覚の良い友人と行ったけど、同意見。 アテは美味しいものもありましたが、握りが普通でした。これはスキルの問題。以前都内で同価格で頂いた鮨屋には全く敵いません。 あと、食材の多くが地産のものでなかったのは残念。秋田、東北の食材はそれ程なかった。 あと、今時酒の金額が非表示な点も良心的とは思えず… これなら、札幌にある10,000円台で食べられる鮨屋の方が全然良かった。そこのお店は接客も握りも最高でした。都内や福岡に10,000円で満足出来るお店もあります。 有名店みたいだけど、信じられるのは自分の舌だけだと改めて痛感。世間の評価もよく分かりません… グルメぶった芸能人が推してるのは、よく分かりました。 接客、料理内容共に残念でした。 誤解の無いように言うと、接客が悪いとか、美味しくないとかではないです。 金額以上の価値を感じられなかったというだけです。つまり、この金額ならもっと満足したかったということです。

In other words, I wanted to be more satisfied with this amount.
