低評価をつける理由が接客に関するものもあるようですが、「いらっしゃいませ」「ありがとうございました」がないからといって腹を立てる理由が意味がわかりません。
金を出す客の方がエライとでも思ってますか?
美味しくないラーメンだとしても、接客が良ければ通い続けますか?
It's a really delicious niboshi ramen.
There seems to be some reasons for giving a low rating to customer service, but I don't understand the reason why I get angry just because I don't have "Welcome" or "Thank you".
Do you think that the customer who pays is Elai?
Even if the ramen is not delicious, will you continue to go if the customer service is good?

★ ★ ★ ★ ★ 煮干中華そばに低温チャーシュー1枚と食べ終る前にニボ玉を頼んだ。ラーメンちょっと量が物足りないから、ニボ玉150gで大丈夫。ニボ玉にも味がついてて混ぜれば美味しい。ラーメンの汁につけても美味しかった。11時30分からだけど11時前から1台待ってた。時間が近づくに人がぞくぞくでオープンした時には待ってる人も居た。ちょっと残念がコロナ対策で仕切りが無い事かな?消毒液は置いて有ってラーメンが来るまでみんなマスクしてるから良いし、誰も会話してる人が居なかったからそれは良かったかな?
I ordered a piece of low-temperature char siu for Niboshi Chinese noodles and a nibo ball before I finished eating. The amount of ramen is a little unsatisfactory, so 150g of nibo balls is fine. The nibo balls are also flavored and delicious if mixed. It was delicious even when soaked in ramen soup. It's from 11:30, but I've been waiting for one from before 11:00. Some people were waiting when the time was approaching and people were thrilled to open. I'm a little disappointed that there is no partition due to corona measures. It's okay because I have the disinfectant and everyone masks it until the ramen comes, and I wonder if it's okay because no one was talking.

駐車場は狭く、最後の一台に滑り込み。
店内は開店前から行列したと思われる先客が居て、溢れた先客と合わせて店前で並ぶ。
その間にも後客が行列を作り出す。なかなかの人気ぶり。
着丼の『煮干中華そば』は、評判通りの上品な煮干しラーメン。
これはこれで、美味しく頂きましたが、秀逸なのは追加でオーダーの『ニボ玉』。
オーダーは食事中に、スタッフに声を掛け、現金支払いの替え玉スタイルと同じ。
ただし一般的な『替え玉』とは異なり、味付け済みでてこれだけで美味しく頂ける逸品です。
さらに食卓にある『レモン酢』をかけるとこれが更に美味しくなります。
お腹はいっぱいになりますが、『ニボ玉』オーダーを強くオススメします。

The "Niboshi Chinese noodles" in the bowl is an elegant niboshi ramen that is as popular as it is.
This was delicious, but the one that is excellent is the additional order "Nibotama".
The order is the same as the cash-paying replacement ball style by calling out to the staff during the meal.
However, unlike the general "replacement ball", it is a gem that is already seasoned and you can enjoy it with just this.
If you add "lemon vinegar" on the table, it will be even more delicious.
I'm full, but I highly recommend ordering "Nibotama".

さて13時30分くらいに行きました。若夫婦が忙しく切り盛りしてましたが、両替も嫌な顔せずにやってました。それから食券買って10分程待ちましたが、回転率は早い方じゃないかなーと思います。煮干し専門なので苦手な方は?ちょっと厳しいかもね。
茹で時間も1分で、ニボ玉は40秒の硬め茹で。でも煮干しってパッツンした麺が合うからこれでOKですね。
良いお店に出会うことが出来ましたよ?

スープは濃厚ドロドロ系で、コレでもかと言うぐらい、煮干しが入っています。
好きな人にはたまらないと思いますが、苦手な人はギブのレベルですかね。
麺は細麺の硬目で、濃厚スープに良く合います。
と言いますか、麺そのものが美味しいです。
量は少なめ、価格は高め。
スープのコストを考えば仕方なしですかね。。。
お店は清潔ですが、食券、お水もセルフサービス。
コロナ禍かもしれませんが、サービスは最低限です。
店員さんの愛想は悪くありませんね。
。。。濃厚なので、お口直しに近所のコンビニコーヒーが必要です。。。

煮干中華蕎麦〜極煮干蕎麦までスープの濃さと麺のゆで具合が異なる。
低温調理のチャーシュー、海苔、味玉が麺やスープの味を引き立てる。
特に、チャーシューの脂分は煮干の濃い味と相性が抜群!
ニボ玉(和え玉)はコロコロしたチャーシューとともに調味油を合わせ、まぜそばのように食べる。
煮干粉末の香りと油が相性抜群。

★ ★ ★ ★ ★ 極を注文。開店時間は1日4時間程度だが、個人的には煮干ラーメンの完成系と銘打っても良いのではないかと思う。店主の無愛想さが気にはなるが許容範囲だろう。和え玉の量が多そうだったので日和ってハーフを注文したが馬鹿なことをした。これがめちゃくちゃ美味い。半玉なんぞペロリである。もう1玉頼んでも良かったかも知れない。
Order the pole. The opening time is about 4 hours a day, but I personally think that it may be called a complete type of niboshi ramen. I'm worried about the unfriendlyness of the shop owner, but it's acceptable. There seemed to be a lot of mixed balls, so I ordered a half in good weather, but I did something stupid. This is insanely delicious. It's a half-ball. It might have been good to ask for another ball.
