グラインダー使わず手研ぎなので刃も傷まず切れ味長持ちです?
１年に1回で後は少し切れ味落ちたら自分で軽く研げば復活します。
こんなに長持ちして申し訳ないくらいです。

Prices are great and the staff is very helpful. Once we selected a knife they also sharpened on a whetstone, it was awesome to watch.
We bought a 16cm misono santoku knife for about 7000 yen with tax. The same knife is about 150 USD on amazon.
They also have many specialty knives that I hope to come back and buy in the future!
