We ordered from the Set menu and the chef prepared 12 individual sushi (nigiri). He also asks for your preference, for example I'm allergic to egg so he let me choose which Nigiri I would like to eat. We got their recommendations on Sake and the two we tried were Aomori made brands. You can buy this Sake in Tokyo but the locals definitely know how to recommend good sake.
