寿司は旨いのだが、オペレーションがひど過ぎ。
寿司は注文してから提供まで15分。
口頭ではなく紙に書いて注文するシステムだが、9種注文して出てきたのは7種。
「提供までのスピードと注文に対する正確性が全く実現できていません。
東京駅や銀座のお店と比べて、注文から提供までのシステムを少し変えている様子ですが、
お客さんが注文する量(需要)と握れる数(供給)をしっかり計算して
店舗をデザインするべきだと感じます。
お客さんは食べることが目的であって、入店する事が目的ではありません。
供給できないなら、需要(席数や入店人数)を少し減らしてみてはいかがでしょうか。」
といった内容を意見要望で書こうと思ったが、テーブルにはオーダーシートしかなかった。
これから沢山の人に喜んでもらえるお店になってください。
オペレーションが改善されるまでの間は、東京駅か銀座まで食べに行く事にします。

★ ★ ★ ★ ★ Kitteで正気の沙汰とは思えないほどの行列を作るお寿司屋さん。いつも気になっていたが、ついに自宅の近くにオープンしたためお伺いすることにした。
色々頂いたが、特にホタテ、アブラガレイはかなり旨かった。逆に本マグロ、イクラなどは価格相応で寒ブリはイマイチかな。
回転寿司特有のデカくてガチガチに握り込んだシャリではなく、ある程度サラッと口でほどけるのも嬉しい。
10皿+椀物で4,500円程度だったので文句のつけようがない。ご馳走様でした。

I received various things, but especially the scallops and Abragarei were quite delicious. On the contrary, the price of bluefin tuna and salmon roe is reasonable, and the cold yellowtail is not good.
It's nice to be able to loosen it with your mouth to some extent, rather than the big and sushi rice that is peculiar to conveyor belt sushi.
It was about 4,500 yen for 10 dishes + bowls, so I can't complain. It was a treat.

習慣とは恐ろしく、毎日利用する施設って意外と目が素通りしているようで、全く気付かなかったww開店から約ひと月程経った1月中旬、平日の夜に利用してみた。
話によると他の店舗はどこもすごい人気で順番待ち必須とのこと。
念のため利用日の前日の同時間帯に状況チェックに寄ったら、あらま。
ぜーんぜん人がいなくて拍子抜け。
受付機械にも「すぐにご案内できます」の文字。
とゆーことで、翌日17時半に相方と店で落ち合うことにして、私が先に到着。
前日よりは少しだけ人がおり、一応機械で受付したところ待ち組数「1」ww
全員揃わないと席への案内が出来ないので、スタッフに相方が到着してから案内してもらう旨伝えた。
待つこと数分、合流してボックス席へ。
根室花まるさんには私は初体験。
結構期待値上げてたので、結果残念な評価になった。
今回、並ばずに入店できたので星三つ付けたが、もし何十分も待ってからの利用だったら星二つだな。
ネタの大きさ、厚みは○
でも肝心なシャリが×
硬過ぎるし、酢の風味が感じられない。回らない寿司と比べちゃダメとは分かってはいるが、これは、、、改善の余地ありあり。
そして大きいので、シャリ少な目を選べるとベター。(勿体無いが、途中からシャリ残した)
季節限定茶碗蒸し帆立と白子入り、、、×
味付が濃過ぎる。帆立の貝柱が5つほど入ってるので旨味が強すぎるくらい。ならばその分味付けを控えるか、貝柱を控えめにするとか調整必要。なんでもたくさん入れりゃ良いってもんじゃない。
茶碗蒸し大好きな私だが半分以上残した。
スタッフは元気で○
しかし、配られる手書きメニューが×
これ、字体が非常に読み辛い。
解読するのに時間かかり、目も疲れるので要改善。
オーダーを自筆してスタッフへ渡すシステムは△
このご時世、あんまり他人が使った鉛筆とか触りたくない。
他の口コミにもシャリについてのコメントがあった。
確かにシャリの硬さは好みもあるだろう。
しかし、100円台の格安寿司じゃないのだし、それなりに評判の寿司屋として必要な及第点はクリアしてほしい。
店は客からのコメントをちゃんと受け止め、早い時点で反省材料にし、より良い店作りに生かすことが大切だと思った。

と連れが言っていましたwうむ!確かに!!
ホタテの稚貝汁、花咲蟹の鉄砲汁など汁物もうまいし、ザンギも300円しないのに大きいザンギが3~4個入っててコスパもよし!
寿司はどれもこれもうまい!間違いなく回転寿司では最強!ちょっとだけ他の回転寿司よりは高いけどね(小声)

★ ★ ★ ★ ★ 2021/12月にオープンした店舗らしい、これで銀座や東京駅までいかなくて良いや!やったぜ!
みたいな気持ちできたら楽しみにしてたまだちが入ってないとのことで仕方なし。
先に言っとくと店員さんの対応や印象はめちゃ良かったが無いメニューは先に黒板から消す、店内ポップやチラシにも簡単な紙をはって告知するなりしましょう。
後注文した物が来ないのは2点、後から言えば来ましたがサビきつくて店員さんが印象良くなかったらカチギレてます。わざとじゃないにしろさびの量などはキッチン側で統一してほしいです。
シャリや鮨としての総合点は何故か銀座や東京駅の方が美味しかったのでこれは新店故にかな?特にシャリが全然違うのは何故か、、俺がおかしいのかな?
また来るときまでに改善してくれてたら嬉しい。
花まるファンなんで頑張ってほしい。

★ ★ ★ ★ ★ 土日の10:55に行ったら長蛇の列。朝10時から整理券を配布。席数多いので、最初の25組目までに入れたら1回転目で呼ばれる。土日の2回転目は1時間後の12時頃から徐々に始まる。オープンしたばかりで多少待つのは覚悟。お寿司は持ち帰りも販売。
お寿司は、席に着くと配られる手書きのおすすめから選ぶのが良い。ネタのクオリティが全然違う。お米も毎日玄米から精米しており美味しい。
サイドメニューも充実。茶碗蒸しや天ぷらなど揚げ物、汁物も新鮮な素材を使っていて美味しい。あら汁が大変おすすめ。具沢山で魚や野菜の量多め、コスパ最強。2人で1つでも十分。

週末、客が並び待ちしていたのを見ました。平日昼はそれはなく、すぐに入れたので入りました。
若手スタッフで、人数もいて、声も出ていて活気があります。
紙に書いて注文しますが、客はまぁまぁいる程度、満席ではない。にも関わらず、一番目の注文から間違えられ…
あと、スタッフ間での会話が丸聞こえなのも良し悪しかと。
一品ずつの提供時間が遅い。
平日でこうってことは、混雑時は…
ネタは大ぶりで、なかなか新鮮。握り方がゆるめなのか、箸で持つ際にほろけてしまうものもありました。
カウンターの席ですと、目の前にずらーっと小物がありすぎるからか? お茶をいれたいから湯飲み取った際、消毒液のセンサーが働いてしまってアルコールが出てきたり(笑) 物を減らして頂きたいかも…
味でいえば、またいきたいですが、店としては二回目はないかなぁ。
