★ ★ ★ ★ ★ 気鋭の若手料理人の仕事を目の前でみれる店の作りが好きです。焼き場、ガス台、蒸し器に俎板、目の前で繰り広げられる仕事が更に食欲を掻き立てます。お酒のチョイスはやや品が良すぎる感はありますが、主役のお料理を邪魔しない確かな選択とも言えるでしょう。お蕎麦に至っては都内屈指の美味しさと称しても過言ではないはず。仕事の質、経験値は間違いないのですから、献立が毎日劇的に変化するくらいの集客力/回転力が欲しいところ。フルに腕を振るう環境づくりが課題かと。この手のお店は料理が美味しいだけでは魅力半減です。もっともっと高く評価されるべき、これからの成長が楽しみな素敵な料理屋さんです。
I like to make a store where you can see the work of an up-and-coming young chef in front of you. A grill, a gas stand, a steamer, a mortarboard, and the work that is carried out in front of you will further stimulate your appetite. Although the choice of liquor seems a little too good, it can be said that it is a reliable choice that does not interfere with the main dish. It's no exaggeration to say that soba is one of the best in Tokyo. The quality of work and experience are undoubtedly, so I want the ability to attract customers / rotate enough to change the menu dramatically every day. The challenge is to create an environment where people can fully exercise their skills. This type of restaurant is only half as attractive as delicious food. It is a wonderful restaurant that should be highly appreciated and look forward to future growth.

There is no photo, but caviar on top of the hot ginkgo okowa! I ate it for the first time and it was delicious! Konowata's chawanmushi was also excellent.
