卵の白身をしっかりと泡立てたメレンゲに砂糖やハチミツを入れて寒天で固め、黄身の衣で包んで焼いたものです。
頬張ると、驚くほど軽い食感！ふわふわなメレンゲはまるであわ雪のように繊細で、口の中ですーっと溶けていきます。
卵は奈良県産のものを使用。新鮮なものではないと白身がしっかりと泡立たないそうで、産んでから2～3日以内の卵のみを使っています。
重要なのは、卵白の泡立て方。他にはない繊細で軽いメレンゲに仕上げるには、機械の泡立て器では無理だと言います。
「機械だと2～3分で泡立ちますが、固くてボロボロした泡になってしまうので、30分近くかけて手だけで泡立てています」とのこと
"Kimigoromo" was born in the early Meiji era.
Egg whites are whipped into meringue, sugar and honey are added, hardened with agar, wrapped in yolk garments and baked.
When you chew, it has a surprisingly light texture! The fluffy meringue is as delicate as snow and melts in your mouth.
Eggs are from Nara prefecture. It seems that the white meat does not foam firmly unless it is fresh, so I use only eggs within 2 to 3 days after laying.
The important thing is how to beat the egg whites. It is impossible to make a delicate and light meringue like no other with a mechanical whisk.
"With a machine, it foams in 2 to 3 minutes, but it becomes a hard and tattered foam, so it takes about 30 minutes to foam by hand."

店員さんの応対もハキハキとされてて気持ち良かったです。

こちらの丁稚ようかんは、固くなくて、どちらかと言うと水ようかんのように柔らかく、つるんと呑み込めます。
優しい甘さで、ついつい食べ過ぎてしまうのが難点かも(笑)
3月初めでしたが、あいにくの吹雪で、自然の厳しさが風情ある町並みをいっそうステキに見せてくれました。
