(2018/07 訪問) 15,000円のコース。 [うに豆腐] 桑名産はまぐりの出汁とバフンウニ、キャビア添え。 甘くて旨いです。 [ハモ] 備長炭でちょっと炙ってあって香ばしくて美味しい。 [ハモの子、万願寺とうがらし、アワビ] 万願寺とうがらしがいい味してます。 アワビには四万十のあおさが載せてあります。 [カニと、なんだっけ] 美味しいです。 [とうもころしのしんじょ、はまぐり] とうもころしのぷちぷちした食感が良いです。 利尻の昆布出汁がしみじみと旨いです。 [寝かせた魚いろいろ] 5日間寝かせたコチとタイ。 16日間寝かせた金目鯛。ねっとり濃厚な旨さです。 5日間寝かせたミズイカ。 口直しのみょうがを挟んで、オスののどぐろ。 アカムツ。 もち鰹。もちもち。さわやかな味。 [クロムツの焼き] 山椒が削りたてです。あー美味しい。 [真昆布、大和芋の揚げ浸し] これもいい出汁して、しみじみ旨いですねー。 [栃木牛のローストビーフ] A5ランク12等級とのこと。 [カニの炊き込みご飯] トリュフががっつり載ってます。 これをちょっと味わった後、卵かけご飯に。 これ美味すぎです。卵の混ざり加減が絶妙。 [白ごまプリン] 最後まで美味しい。 広島まで遠いけど、また行きたいですねー。

なかなか予約取れませんが、ある日空きがありましたので、先に予約して友人を集めました。笑 初訪です。素敵な空間ですが、居心地良く楽しめました。いつもはどうか分かりませんかわ、出汁系の料理が多かったです。大変満足しました。また行きたいですね!!

出汁がすべてを決めるんだと思います。 北海道からの昆布がお店のディスプレイのひとつのように保管してあって、なによりも大事にされているのだと一目で感じました。 味わいは、、、、言うことなしです。 丁寧な仕事は食べたらすぐに感じることができます。 広島ではなくてはならない名店ですね。 I think the soup stock determines everything. とにかく素晴らしかったの一言につきます! 残念ながら1月末までで平野大将の料理を食べる事が出来なくなりますが、一生に一度行けて良かったと心から思いました。 出汁が素晴らしい。魚も素晴らしい! 白子は今まで食べた中で異次元の美味しさでした! どのお料理も、とにかく素晴らしかった! 間人蟹の香箱、長期飼育の牛など食材も素晴らしいけれど、このお料理をこのお値段で??とびっくりするほどのコスパの良さ。 何から何まで圧巻でした✨

本当に感動するほど美味しかったです。素材にもこだわりを感じ、出される全ての料理が本当に素晴らしいと感じました。ご主人の料理の説明もわかりやすく楽しさもあり至福の時間を過ごすことが出来ました。贅沢ではありますが特別な日にまたお伺いしたいです。 2回目行かせてもらいました。 やはり感動するくらい美味しかったです。これから定期的に行けたらと思います。
It was so delicious that I was really impressed. I was particular about the ingredients, and I felt that all the dishes served were really wonderful. The explanation of my husband's cooking was easy to understand and it was fun, so I was able to spend a blissful time. It's a luxury, but I would like to visit you again on a special day. I was allowed to go for the second time. After all it was delicious enough to be impressed. I hope I can go there regularly.

個人的にここ何年かは広島で一番だと感じています。まず出汁が素晴らしい。何年も熟成された稀少な昆布や鮪節などを料理に合わせて使い分けていらっしゃいます。 熟成刺身も絶品です(特に熟成イカが素晴らしく、もし出会えたらラッキーです)
Personally, I feel that the last few years have been the best in Hiroshima. First of all, the soup stock is wonderful. Very good kaiseki restaurant in Hiroshima . The chef will take you to a journey using different types of dashi ( soup stock ) and seasonal ingredients. The result in an incredible experience with an impeccable service. The cheapest course menu is approx 10,000 yen per person , no wine list and make sure you go with someone who can speak Japanese . Highly recommended.
